Looks like you need to fix the temp gauge or the thermostat. Also at 22:38 sure looks like the nut on your throttle linkage is loose it appears to be moving back and forth from the vibration.
I threw 3 different temp senders at it the day before we left and nothing. So I've got a spare gauge I'm going to throw in. The linkage was loose. It was super annoying. It kept wiggling itself under the fss so a lot time I had to dump the clutch to shut it down.
@ check that the block to cab ground is not high resistance or missing. Also check the dash ground. Also be sure the cab to engine ground is to the head and not the block. Multiple senders reading low is pretty common with a ground dropping voltage.

Dual stage oil filter setup. 2. Dual stage fuel filter setup, pretty much a similar to the Oil filter design. 3. Utilizing a proper oil for diesel engine, highly recommended 'Shaffers oil’. 4. After-market oil pump that are always better quality and more durable than OEM equip. 5. InnerCooler air intake for the Turbo. (definitely a Must). 6. Larger Exh piping 4” minimum Dia. Preferable 5”. 7. If available, Banks manifold. 8. The usage of additives when cooler weather to prevent jelling of fuel. 9. A block heater system. 10. Larger free flow Fresh air intake setup. There are some very good 7.3 community , Diesel oriented channels with proven data& results in which apply to Any diesel engine. Absolutely need to keep the oil & Fuel both, filtered best we can. Let it breath & be cooled the best we can also. These will reduce EGT and keep the engine most efficient thus long lasting-durable. on several levels.
