    So, you want to know what kind of videos that I want from you? MORE! lol! Doesn't matter, just more. All of your videos I have watched thus far (just found you recently) have been very helpful! You are easy to follow and understand. Earlier I watched the one where you did nine cakes in less than an hour and I loved it! No crazy music, no FF'ing...it was just a nice, easy-to-follow, calming video. I am 66yo and have a rare type of arthritis in my wrists and hands. I took up baking (used to bake) this last year to help keep my hands as limber as I can for as long as I can! This last weekend I made an Italian Cream Cake for my sister for her birthday. II suddenly remembered how much work that cake is, and boy is it a heavy cake! lol! Anyway, she loved it and it was a big hit at her party. I wish I had seen your videos before I made it, though. In my opinion, even WITH a crumb coat, the way you frost with LOTS of frosting, would be helpful. And thanks for the tip on how to tell just how thick you've applied frosting to the cake! That was one of my BIGGEST problems. Well, I could go on and on, but I will spare everyone! Thanks so much for taking the time to share your skill, technique, and talent with us still learning!     Thank you so much for this! I work at Walmart and we don't have time to crumb coat our cakes so I usually really struggle with not picking up crumbs

    This is so helpful !! My first cake job I was crumb coating everything, but at my new job they don’t want me to crib coat and it’s been a bit of a learning curve. Your video and demonstration are super helpful !! I appreciate you !

    I definitely will attempt this 😍 the only way I've gotten away without a crumb coat is by piping on a thick coat of buttercream but it really isn't efficient, this method seems so much better!!!

    i think it helps because your buttercream is so light and fluffy, if it's heavy and thick you definitely need the crumb coat. I just found your videos and I used to do cakes and I miss it. maybe i'll start up again.

    Hi, i'm new to cake decorating and I've been watching many videos to enhanced my skills in that area. When you layer your cake, do you put simple syrup on your cakes to keep it moist?

      Hi! I know you posted this question a year ago, but I've only just discovered this video and I just did a deep dive on simple syrup, so I thought I'd share what I learned. I use baking strips for my cakes and multiple pans so that I never have to cut my layers in half. That way, the caramelization of the baking locks in moisture and I don't need simple syrup. You only need simple syrup if your cakes have been trimmed and seem to be drying out. If you have a good recipe for a nice moist cake, it's completely unnecessary and can even result in a soggy sweet cake with an unpleasant texture. I chose to focus on ways to lock in moisture instead of having to add simple syrup. One technique is to wrap the cake in clingfilm when it's still slightly warm and put it in the freezer. Then you can move it to fridge or completely thaw out before decorating. That works really well for me and everyone raves about how moist and delicious my cakes are. Hope this helps!

    This is a wonderful video on this technique. You are amazing. It’s hard to do this as an at-home baker because when using colored buttercream, you have to have so much extra of it to do this and I have way to much left over. If I’m doing white, it isn’t too bad because I can save it to use later. But doing colored buttercream limits me. I can see in a bakery though I can see that no matter how much pink you have, you will use it up.

    Question you stuck your cake scraper in the buttercream to see how thick it was. How much on the cake scraper would you recommend the icing reaching to know it’s the right amount and not too much. Sometimes I end up putting too much buttercream and sometimes too little of thickness on the outside

    How many cups of buttercream would you estimate you use? I typically make 4 cups of American buttercream but I can see why I have problems. Seems like I should double it?

    How much butter do you use for one cake? 1 block of butter from the grocery store has 454 grams. Do you think you are using 2 grocery store blocks? (I realize in a bakery you probably don't use grocery store blocks of butter)

    Yep we ice like this by hand with the spatula or more often use a side icer, and it's done, no crumb coats. With the volume of cakes we do there's no time for crumb coating😅

    Lol I never ever did a crumb coat….I always did the coating in one step…..if your buttercream is hard it will be kinda hard to do that , so the consistency has to be perfect to spread easily.

It adds extra time and is messy - BUT I do understand that people have their way of doing things and if you want to trim the sides and that works for you, then great. I tried it and didn't see the advantage, I just Bake the size I need. Have you been baking long?
