- This Spanakopita recipe is easy, crispy with an amazing flavorful spinach filling.
INGREDIENTS:
1 pound/ 16 oz. of pre washed baby spinach
3/4 pound sheep milk or cow milk feta cheese/ I used sheep milk feta
4 tbsp fresh chopped dill or1tbsp dry dill
3 thinly sliced spring onions
2 tbsp chopped fresh chives
1 tsp black pepper
1 tsp oregano
1/2 tsp salt
2 medium eggs/ 55 g each
1 pound whole ricotta cheese
1 whole package fillo dough
170 g melted cooled and unsalted butter
1 egg plus 1 tbsp water for egg wash
2 tbsp un toasted sesame seeds
2 tbsp black sesame seeds
PREPARATION:
Start by preheating the oven to 375°F. For the filling chop roughly 1 pound of baby spinach. Then chop the spring onions, dill, chives and add on top of the spinach. Crumble 3/4 pound of feta on top of everything, the black pepper, salt, oregano and two eggs. Mix well and set aside.
Start layering the fillo dough one after the other. Brush with a generous amount of the butter after each layer. You're going to add between 5 and 7 layers at the bottom. Add the whole amount of filling, spread evenly. Top with 5-7 layers of the dough and don't forget to butter each layer. Finish with and egg wash on top and slice into even squares. Sprinkle sesame seeds on top of each square. Bake at 375°F for 30-35 minutes. Enjoy the most amazing crispy creamy spanakopita.

This looks delicious. It was ok to repeat to about the dough. I've never cooked with fillo dough. Your very thorough, in you instructions. Thank you for posting. This is a great recipe. It might be a bit expensive but per serving maybe not so much. Your easy to listen to.

Can I use cottage cheese instead of ricotta and can I use olive oil instead of butter?
@@lizsarkissian4666 it’s not traditional but you can try. Make sure to drain well before using though 👍🏻
@@daintybiteI just made it and it came out amazing. I made some adjustments based on what I had. So I used extra virgin olive oil, low-fat cottage cheese instead of ricotta and .60lbs vs 1 pound of spinach and I first steamed the spinach, cooled it, squeezed all the liquid out with a cheese drainer, then chopped it and mixed it with the cheese mixture. 😋

Instead of all butter, you can go half and half with olive oil and unsalted butter. I skip butter or using oil combination on bottom of pan and just lay first filo and then add butter or oil.
I also add a clove of garlic, little lemon juice, lots of fresh dill and plain Balkan yogurt with feta cheese. 5:33 5:33

Dill is needed in spanokopita as is the authentic Greek taste with it.

Now my problem is where to find filo dough
Adding leeks,adds that extra tastiness
I followed your recipe. It came out too salty and too buttery. I used non salted butter, but it was just too overwhelming 😢 I think also the dill gives it a strong salty taste
@@02Nawal thank you for your feedback. It might be the kind of feta cheese, sometimes it’s extra salty. If you don’t like the taste of dill you can replace with parsley and dont add any extra salt. Good luck next time!
