Asian Lettuce Wraps - Low Carb Recipe

Today I present my Asian inspired lettuce wraps. This quick and easy recipe has just the right balance of flavor and can easily be modified for more spice, tang or nuttiness by adding more or less of just a few ingredients.

Ingredients:
2 Tbs oil amzn.to/3kWrMk8
1 lb. ground pork
1/2 medium onion, diced
3 cloves garlic, minced
2 green onions, divided and thinly sliced
1/4 cup soy sauce
3 Tbs rice vinegar amzn.to/2HOoDew
Zero carb sweetener = 2 Tbs sugar amzn.to/2hReroU
2 tsp. sesame oil amzn.to/2LrP2Eg
1 Tbs peanut butter amzn.to/2AOv2De
1 tsp sriracha sauce amzn.to/3p8pfjj
1 tsp ground ginger amzn.to/2t2iV1Y
1/8 tsp xanthan gum amzn.to/40jSBhq
16 leaves of lettuce cups for serving
Makes 4 servings (4 lettuce cups per serving)
Per Serving (4 lettuce cups):
433 calories / 35.29g fat / 2.28g net carbs / 22.54g protein
Directions:
1. In a small bowl, whisk together soy sauce, rice vinegar, sugar substitute, sesame oil, peanut butter, sriracha, ginger and xanthan gum. Set aside
2. Add oil to a large skillet over medium-high heat. Add pork and cook until halfway done. Add onions and green onion whites and cook until soft and pork is fully cooked. Stir in garlic cook for a minute more.
3. Pour in sauce and cook 1 to 2 minutes more, until sauce thickens. Place in a serving dish and top with green onion tops.
4. Spoon large scoop of pork into center of each lettuce leaf.
