The FLAVOR of the chiles is simply far better when roasted in the propane fueled drums compared with ANY other methods.......all of which take far longer and cannot achieve the same result...

I know nearly every grocery store in Texas, AZ, CO, and nearby states have a roaster on site for at least chile season. Maybe you should travel to NM during chile season and bring the chile back home? A "years" worth of roasted and frozen chile wont cost you more than about $50 tops.

Restaurants here sometimes are only open for breakfast and lunch they don't close to early you just don't know the way things work here.
