I wish this recipe could be released soon enough but it is definitely a keeper. I will save it for next year to try out. I don’t think I can get a hold on fresh grated coconut,. Would dedicated coconut work for this recipe? I like how you incorporated one of those nyonya desserts into mooncake. 👍🏻
Can you check again the amount of water? 175ml vs 120 flour makes the hydration 145%. Even if you add in the icing sugar the hydration sounds like alot
Don’t think you can do that. However, if you do not want to use shortening you can make the snow skin using Mochi dough instead. This method uses a mixture of glutinous rice flour, rice flour and wheat starch and mix with liquid. Then steam to make a cooked dough.
These are best eaten fresh after chilled. If keep in a dry airtight container, perhaps up to 1 - 2 weeks. Be sure to fry the coconut filling well. The mochi will dry out and crack if left too long.
Hi Alice Liew, please clarify the amount of Pandan juice required for the making the mooncake skin. Your recipe shows 175ml pandan juice needed but your instructions says 80ml pandan juice. Also how many pandan leaves did you use to make the pandan juice? Please confirm amount of water needed to blend with the pandan leaves…..80ml or 175ml. Thank You.

Thanks. Yes, its really good. I have not used desiccated coconut but you may mix desiccated coconut into mooncake paste with palm sugar flavor.

Sorry for the overlook. It should be 175ml water. You can use 3 to 4 pieces of pandan leaves. Thanks for pointing out.
