After I slice my bananas, I put them onto skewers, which IS tedious, but it really ups the quantity of banana that you can get on a tray, AND maximizes the area exposed in the chamber. Plus it's easy to de-skewer into a container or bag.

Try quail egg scissors for candy or maybe cigar scissors? I didn’t get banana scissors, instead I got a device that looks like a soap cutter you put a whole peeled banana on it then close the top and metal strings cut the whole thing in slices all at once also you can make banana fries by separating them into the 3 parts they grow in naturally
Yes but the dry time is dependent more so on total weight of food and ambient temperature in the room of your FD. In the winter time, 12 pounds would freeze-dry in 24-28 hours (excluding freeze time because I pre-freeze them).

What are the pros and cons of using something like pineapple juice to keep the the bananas from browning? Has anyone seen a differnce in how well the bananas sell or taste using doffernt methods?
i have used this for strawberries. it works well if i'm doing just a small amount. however i have a big slicer for large batches of strawberries. If i don't want to get out the big slicer and all its attachments etc, then i use the banana slicer for strawberries. Also, the banana slicer doesn't accommodate larger strawberries. So, yes, it works for strawberries in certain circumstances.
So roughly 40hrs for 13lbs of bananas. How do you monetize that if you're using one machine? Is it just one vs multiple simultaneous batches? Sell premium bags of just dried bananas or incorporate them into a more complex product?

No, I don't pre-treat. I cut and then put in the freezer to pre-freeze and then place in the freeze dryer

I have used a very light amount of lemon juice before so that the taste isn't impacted too much. I have not tried anything else.
