- In this video, I'm gonna show you how easy it is to make the one of the bests and simplest drinks ever made... A Traditional Pineapple Breveage called Tepache! It's sweet, crispy, funky, and delicious drink. That has a ton of probiotics to support the gut.
Here's the list of ingredients you need:
1 Ripe Pineapple (be sure it's not overly ripe!)
3 piloncillo or 2 1/4 cups of brown sugar (depends on how sweet you want it to be)
2 cinnamon sticks
4 pieces cloves
4 peppercorns
4 liters water

Im worried about exploding bottles. How long can i keep them in the fridge? Do i have to keep opening the bottles to release gases?

Why my tepache become thick ? Because I add some more of the flesh of the pineapple on it? Or because Im using wrong Jar (I using wide neck canister so the whole pineapple become floating. Please help me.
Apologies for the delay! I encountered some technical difficulties that prevented me from responding sooner. It seems your Tepache has thickened into a syrup-like consistency, indicating spoilage. Surprisingly, Tepache can spoil this way due to contamination. Mold on the surface is another common cause, which can occur when not stirred daily. I'll be releasing an update video soon with more detailed information about Tepache and so on. Again, I apologize for any inconvenience caused.

I like this tepache recipe the best, because you don't have to measure out any sugar, you just throw in the cone instead! Great!
I'm just wondering what the difference is between air sealing the tepache jar like in this recipe, and just covering the jar with a breathable cloth?

There two type of fermentation anaerobic fermentation which occurs with low oxygen this is type of fermentation is use to produce alcohol is also known as alcoholic fermentation then there aerobic fermentation which occurs with a lot more oxygen present it could be use to produce vinegar.
