    My father, who was born in 1915 and was raised on a ranch in Mexico, used to talk about making tepache. It always sounded disgusting to me. I'm now 61, and I finally realize the wisdom in making these old recipes.

    You can also plant the pineapple top and grow another pineapple plant. It will take about 2 years to grow a new pineapple. If you live in a cold climate, just bring it inside when it starts to get cold.

    I would like to add that in Mexico we usually don t put Chiles on tepache. We use piloncillo, if you can find it in your latín store, give it a try, you'll love it.
    Important: this beverage is not for diabetics, please avoid it.

    Great video, Mary. I use regular old refined cane sugar or brown sugar because I can't be bothered buying what I don't have. I also use plain tap water straight out of the tap, again because I can't be bothered. No problems caused by either in the fermenting. End result with spices is like street tepache.
    Edit- forgot to add - if you want a house plant, don't chop off the greens. Instead, give it a good strong twist off, strip a few leaves from the bottom to expose a leafless base of an inch or two. Doink it into potting soil in a handy pot and water it into the center of the plant. Easy. Hardy and not fussy.

      Tap water has some pretty horrid stuff in it
      Refined to unrefined sugar, not so much

      I make tepache like you, the more sugar, the more it ferments and if you add a little left over of your last batch, it will ferment faster, I forget what it’s called, this process. It has to be mixed everyday and for me the more bubbles and foam the better, then I add a bit more sugar and a few pineapple pieces before refrigerating. The problem is then opening the bottle, sometimes it’ll gush like a rocket, which means it kept fermenting in the fridge with the added sugar and fruit. I love it. I make it with strawberries too but impatient me adds a wee bit of champagne yeast. Oh so good!

      I wish I trusted our tap like that. We get regular notices in the mail saying our water has dangerous levels of chemicals that cause cancer :) It's been that way the 5 years we've lived here.

    Question. It's awfully hard for me to trust the cleanliness of purchased produce. Do you wash or rinse off the pineapple before using? Is it ok to rinse it and let it air dry and sit for a couple of days to pick up the yeast and bacteria naturally occurring in the air? I want to mention, I preordered your book when first announced and have been over the top thrilled with it since the day it arrived. As I have told so many people, you are my number one go to for traditional cooking skills. I'm so grateful you are here for us.

      I make the Jamaican version and they always wash the pineapple first, as there maybe airborne dirt or bugs on it.

      I guess you could add water kefir grains to help promote fermentation in case there isn’t enough yeast and bacteria left on the washed pineapple… they are available online and on Amazon. 👍🏻

      I have certainly become fascinated with fermented food because of you. I have tried a number of your recipes. I am in love with kombucha and my family has grown to love it too.     I make mine in the exact same size jars as you did. Love the taste but mine was a little syrupy in consistency, almost like a cordial drink. I will try using only 1/4 cup of sugar as you did, I had been using a full cup!

    I am making this TODAY! So excited to taste it. If anyone is wondering, the pineapple corer/slicer from Aldi does a pretty good job. I used it, and ended up with a pineapple "shell" I could just go ahead and chop. It probably didn't get as close to the rind as many would like, but I've never been good at paring anything close to the rind/skin! One of my mother-in-law's gallon pickle jars has been out and waiting to be filled, so I used that. I will be starting the pineapple scrap vinegar once the tepache is done. Thank you Mary!!❤🍍🍍🍍

    I wash my pineapple in a deep basin filled with baking soda and water let soak for 10 minutes and then hand wash.

    Mine is made differently. I blended my pineapple with the rind and core. Left it for few days to ferment. I just added jaggery now and am enjoying it.😂

    Love this video. You always explain thoroughly. Can you use plastic jars that have been sterilized, such as mayonnaise jars?

      I just don’t want the mixture to melt the plastic or explode. I’ll try a little in a plastic jar, but I will use glass as you did. Thanks for answering. You’re the best.Blessings.

    I read cookbooks before the 1940's (when most foods from scratch and not so processed and frugality was a virtue...)this recipe is in my Alice Bradley Menu Cookbook. I knew it was tasty but didn't know about the health benefits but not surprised. BTW does anyone remember the "Pineapple diet" of the 80's? It was all about the bromalaid :)

      I don't know if there is any specific recommendations as to fermented beverages but if you are new to them - always start with small amount - maybe 4 ounces and see how it agrees with you. Love, Mary

    I make this, but I know it as Chicha. It’s worth noting that if any black foam appears, it should be discarded. The foam should be white.

    Could you put this in ice cube trays/bags and freeze it for an extended period of time? Just so you can keep it around for longer. Would the good properties stay that way or would you lose some of it?

      That is a great plan! Yes, you can freeze it. It will lose the effervescence and a few of the probiotics will die off - but not all. And it will still be high in anti-inflammatory properties. Love, Mary

      Fermenting uses up the sugar

      The yeasts and good bacteria will gobble up the sugar so the beverage is actually quite tangy. Cutting back on the sugar would be an experiment but it's worth a try. Love, Mary

      Pineapples go from green to yellow...I like mine closest to yellow right before it starts to rot. The pineapple she used would have been sitting out on my counter for at least a couple of days...It didn't look ripe to me.

    I do not care for the effervescence. If I allow the bubbly to escape, am I losing any health benefits in this beverage? Would it be more like a fruit juice in flavor?

    Is the pineapple you used ripe because it still looks green. Can you use a yellow pineapple? Also is the sugar from a sweet pineapple enough or do you need the sugar too?

    Do you need to wash the exterior of the pineapple first before slicing? Just curious. I watched another video were they used the cone shaped piloncillo instead of brown sugar. I assume it is also a natural sugar. Thanks so much , Mary for all your videos. I am trying to reduce the highly processed foods as much as possible. I make my own bread, sourdough and regular, as well as Kefir water and other homemade baked goods. I do canning as well and stay away from as much packaged gravies and meat helpers as possible.
