    My first thought when you revealed that clear pot was "I get why you want that but it is going to end in disaster. When (not if!) if fails it will make a huge mess and ruin the food, and glass has pretty terrible properties for cooking to begin with." You did get some nice shots with it before it failed at least

    Return with us now to those thrilling days of yesteryear (late 50's) when mom made pea soup in her 1940 pressure cooker. It had a weight that fit over the pressure valve that was supposed to let out enough steam to keep it from blowing it's top. Anyway, I learned at an early age why my father painted the kitchen, including the ceiling, with a high gloss enamel paint.

We came home yeilding to Fire Trucks, following them to my home finding the smoke detecter blaring and black smoke wafting out of the windows. No fire however, I couldn’t use the oven nor stove top anymore due to the fire extinguisher used and it took a week before the new one arrived. • @jreyman
      @jreyman Місяць тому +5

      More likely a thermal failure. Glass likes to be evenly heated/cooled, as glass expands and contracts according to it's temperature. There was nothing even about the glass temp, in this cook. Super hot temps at the bottom (burner flame) Small mid temp (liquid level) low temp (air level). This resulted in an uneven glass temp across the surface(s), causing stress to increase to failure.

    I am not a chili powder fan. I will use powdered chilis but I find chili powder imparts a bitter flavor. I so love that you use chipotle powder. I do the same. Plus it adds a depth of flavor. I feel like our brains work the same. I love the seasoning between the skin and the meat.

    I had a glass baking dish explode on the stove when I was a teenager still learning to cook. I thought I had to melt the butter before adding chicken. That dish exploded all over the kitchen. Luckily, I wasn't standing by the stove when it happened. Haven't used glass cookware since. My brothers still talk about it 50 years later.

    Youre not alone. Many years ago, my mother was cooking vegetable soup using a pot with a tempered glass lid. About half an hour, the glass lid broke into little pieces and the shards ended up in the soup. She called the store where she bought the pot and they reimbursed her for the lost ingredients.

    glass pots suck: i finally ditched those that'd inadvertently accumulated in my cupboard - though lids one can see through are useful.
    my daughter makes a chicken'n'dumpling (note singular) where the dough covers the whole top like a round breadloaf: fantastic!
    it'd be entertaining to see you make chicken chinese dumplings (with a marinade & dipping sauce, natch) from scratch with the meat & vegetables in shreds or pieces instead of mashed into a chunky paste like most are. we do'em with a quick boil then into different bagged marinades for a while before grilling over an open fire on either a gridded or flattop (if with vegetables) iron grill: more fantasia! & fun tweak: don't throw out any skins or trimmings from onions (& garlic): throw it onto the fire for a subtle onion-smoked flavour.

    Do it as a pot pie, that dumpling with a little browning on it has to taste ridiculous. Skip the bottom crust, that's always goopy and raw, or maybe do them in individual dishes, make some extra liquid to use in the dumpling batter, then use them as cover in kinda spetzel form as a top for a little browning
