Mosaicking is explained in detail in our multi-temporal webinar: ua-cam.com/video/kbw3OyYkbA4/v-deo.html. Mosaicking you see in this webinar is done with a SIMPLE mosaicking type (docs.sentinel-hub.com/api/latest/evalscript/v3/#mosaicking). This means that only one sample per pixel is being passed for evaluation. Which one this is depends on the mosaicking order (docs.sentinel-hub.com/api/latest/data/sentinel-2-l1c/#mosaickingorder). The default one is "mostRecent", which means that the most recent available sample will be shown for each pixel. Please use our forum for further questions: forum.sentinel-hub.com/
You can find the link to the AWS S3 bucket (or the SciHub download link) in the search results (click the link symbol you see here: ua-cam.com/video/eK0OMn5H-kY/v-deo.html). On how to download data from an AWS S3 bucket there are plenty of good articles you can easily find on google. To get to search results look at the section (Search & view mosaicked imagery). It's basically just setting your search parameters in the Discover tap and press Search.
No, this is not possible in EO Browser. You can, however, write a simple script and use Sentinel Hub Statistical API to do the job. cant download image georeferende, or add a GPX ( only poligons allowed) :(

I wonder if it is possible to analyze time series for multi-polygons and not only single polygons on EO.
