I planted 2 olive trees about 6 years ago in the ground. I never had the chance to prune them the next year and they haven’t been touched since. They are now about 4m tall. There are many branches coming from the trunk at ground level. There’s been plenty of fruit but branches hang down and now I feel it’s too late to try and get some shape into the tree. Will I kill them if I cut all branches at the main trunk to try and get that mop top shape?
Haha I literally just hacked my Europa down to a stump yesterday. Not fussed if it survives as it was way overgrown but a part of me hopes it'll reshoot

Always in the ground unless your soil is trash.
Gosh I despise olive trees grown in Australia. They are invasive to native bushland. Imported olives and olive oil for me... no pruing required!
