Beth, I am so glad to see the metric measurements. I started using the scale and I absolutely love this when baking. I don’t have all those measuring cups to clean now.
One thing you can do is press the backside of a 1/2 teaspoon into the top of the cookie before baking to make an indentation, then gently fill it with a small amount of jam or preserves, try apricot for a perfectly complementary flavor. I cut the corner of a plastic sandwich bag and fill it with jam to create a makeshift pastry bag to make placing the jam easier.
I was just thinking of what homemade cookie flavor to gift my friends and family this Christmas. The snowball look is perfect for the holidays. Thinking of adding some cocoa to make the crackle stand out even more. Gonna make this once i get some powdered sugar from the store. Thanks for sharing 👍

I just baked 4 dozen of these and they are so good! Can't wait to share them with friends and family. I measured the sugar and almond meal first and mixed the orange zest right in so that it was well integrated. Also added a pinch of salt since I feel like it helps bring out the flavors in sweets even better. I was able to make 2 dozen from each batch (rather than 18) and I like them on the slightly smaller size since they are so dense and decadent.
I LOVE amaretti cookies! I can’t wait for your cookbook. Will you make a post when preordering starts? I will buy it IMMEDIATELY 😂. I have been waiting so long for this. 💙

Second, I was hoping you could help me because I've apparently misplaced a recipe of yours I used to make every Christmas (I've had to stop for a few years due to ongoing health issues and now I can't find it!) It was the most amazing, fluffy mashed potatoes ever, and I'm pretty sure they were part of a menu but no matter how I try, I can't find them. It was the very first one where you mentioned whipping the mashed potatoes so they'd be fluffy; pretty sure it was a Christmas menu. It would mean the world if you could help me!

It's funny about the accessible ingredients because after moving to France I'm even more conscious of using things I think everyone can get because I can't get all the ingredients I'm used to from the States and don't want to use things here, that I know everyone else won't be able to find either lol! These look wonderful. I've been using Bob's Red Mill almond flour...there are two types: a finely ground and one that's a little coarser.
