    This Apple Cinnamon Cake will be your new favorite cake recipe for fall. It's light and fluffy, and so incredibly moist inside. It's flavored with vanilla, orange zest, and cinnamon, which pair beautifully with the tender baked apples.
    This cake is inspired by an old-fashioned apple cinnamon cake that my parent's neighbor used to make for them back in the 1960s. It's a cross between a dessert and a snack cake. It can be served at tea time, or with coffee at the start of a brunch.

    THE BEST APPLE CINNAMON CAKE RECIPE
    Serves 8
    Print Recipe Here entertainingwi...
    INGREDIENTS:
    1 cup (224 g) Land O' Lakes salted butter (if outside the U.S.A use unsalted butter)
    1 cup (220g) white sugar (for best texture use Superfine, Caster Sugar)
    3 eggs, at room temperature
    2 teaspoons (10 ml) pure vanilla extract
    3 Tbsp (45 ml) orange zest
    2 cups (280g) all-purpose flour, sifted
    2 1/2 tsp (12.5ml) baking powder
    1/2 tsp (2.5ml) Kosher salt
    2 1/2 cups (312 g) diced apples
    3/4 cup (112g) chopped pecans
    ! Topping:
    2 tsp (10 ml) sugar
    1/2 tsp (2.5 ml) ground cinnamon
    METHOD:
    Preheat the oven to 350F (175C).
    Spay a 9" cheesecake pan with baking spray and distribute it well with a pastry brush. Set aside.
    Beat together the butter and sugar with an electric mixer until nice and fluffy, scraping down the bowl as needed.
    Add the eggs, one at a time, beating in between each addition and scraping down the bowl as needed.
    Add vanilla extract and orange zest beat together and set this mixture aside.
    In a medium bowl, sift together the flour, baking powder, and salt.
    Add the dry ingredients to the butter mixture, in thirds, gently beating until combined and scraping down the bowl as needed.
    Add the apples and pecans and beat gently with the stand mixer, or stir in with a wooden spoon until just combined.
    Transfer the batter to the prepared pan, and smooth it out with an offset spatula.
    Whisk together the topping sugar and cinnamon. Sprinkle it over the top of the cake batter and swirl it into the batter with a skewer or fork.
    Bake for 45 minutes, then cover with a sheet of foil and bake for another 5 minutes or until a toothpick comes out clean.
    Allow to cool completely and then just before serving run a sharp knife around the perimeter of the pan, to loosen the cake.
    Release the spring and transfer the cake from the pan with a cake lifter or large spatula, to a cooling rack or cake stand.
    Dust with powdered sugar and serve

    I like the idea of using raisins, could you swap dried cranberries for the raisins? That flavor marries well with apples and oranges and is a seasonal ingredient for fall. Also how would walnuts do if you could not use pecans (in-law has allergic reaction to certain nuts)?

    • @EntertainingWithBeth
      @EntertainingWithBeth  Рік тому +2

      Oh sure you could do dried or I would actually use fresh cranberries (1 cup) then lower the apples to 1 cup and sure chop the walnuts finely and use them instead of the pecans. It would be great! :) Hope you enjoy!!

    What a beautiful cake! It's funny - I'm not a huge apple fan, but I like the IDEA of apple desserts and recipes. If I were going to make an apple cake, though, THIS would be it! Absolutely! I'm actually considering making it, it's just that pretty!
    As for raisins? I grew up in a strongly divided household. My mother hated raisins for some reason - just despised them. My father loved them and one of his favorites was raisin pie! A couple of times he dropped hints which she completely ignored so both times he stopped at the A&P (that's showing my age!) and brought home raisin pies. After that, she felt guilted into producing a raisin pie here or there or making apple pies and adding raisins to one especially for him! I ended up somewhere in the middle - I don't hate them, but I never really think of them except for making mince pies! 😂

    • @EntertainingWithBeth
      @EntertainingWithBeth  Рік тому +1

      Ha! Oh my raisin pie! Now that is something I MUST try ha! Was there a cake component to it? Or just a pie filled totally with raisins? Ha! Sounds intriguing! And I must be showing my age too, because I grew up with the A & P too! :) Are they still around?

    • @Lucinda_Jackson
      @Lucinda_Jackson Рік тому

      @@EntertainingWithBeth
      No, they're all closed now. I was amazed when I moved to this small Southern town in 2015 and they still had an A&P! It was strange - not the bigger supermarket A&P from my teens and 20s, but more like the small grocery store from childhood before supermarkets completely took over. Anyway, it shortly closed and I think that's when the company finally went completely out of business.
      I'm surprised you never had raisin pie - I'm certain you'd like it! It's funny to me that my grandmother (my father's mother which is where I'm guessing my father got his love of raisin pie) also made mashed potato filling or dressing with the turkey at Thanksgiving. Both are Pennsylvania Dutch and she was 100% Irish! She grew up with servants (la-de-da! 😂) so maybe they had a German cook? 🤷🏼‍♀️ Anyway, long story, but I don't have any of my old recipes here with me. I took a look on Google and the one that seems to be what I remember is this one. It definitely had both white and brown sugars, had lemon juice as the acid and included allspice. The others I saw were missing one of these elements. But I'm sure the deep dish one from Love Flips is delicious, too. I'd just add a little allspice. 😊

      Maybe you could make in the mini bundt pans and sprinkle the cinnamon sugar topping in the bottoms? It wouldn't come out crackly, but I don't know if it would just bake into the cakes, make a syrupy topping when you flip them out, or if it would burn on the bottoms 😬. You'd definitely need to a test run first, experimenting with different ways of using the cinnamon-sugar.

      Well, I have gone down that road on a cupcake testing mission once thinking that it would really make the difference, and...meh? Couldn't really tell! Ha! I think sifting the flour makes a bigger difference. But you could put it to the test! Quick request Beth - would you be able to do some new recipe ideas for packed lunches that travel well? I've been bringing my own lunch to work and I don't always have access to a microwave, so it'd be amazing to have a few extra recipes in the repertoire that can be enjoyed hot or cold and where necessary on the go! Bonus if it can be made ahead in batches and stored in the freezer that would make life so much easier
