    Oh my goodness, thank you so much for sharing this. I have some pretty serious digestive issues with grain but I also love quesadillas and I like to eat healthy. This is a life saver, living a grain free lifestyle can get a little boring at times. So THANK YOU!!

      ***** You should definitely use plastic cutting boards for meat, but otherwise, for fruit and vegetables, I wouldn't worry about it.

      Cassey, can we use a replacement to coconut flour? like almond flour? What would change in the recipe if we did? I can't find coconut flour in any of the stores near my house :(

      If you are willing to wait on shipping I buy my coconut flour and almond flour in bulk from honeyville.com. Where I live they don't sell in store either. You could also try netrition.com their shipping is cheaper and sell in smaller quantities.

    My batter turned out a bit too eggy because I'm still not too good at separating egg whites and yokes yet but my husband called me today from work to say they were absolutely delicious! :) Thank you. Will definitely make these again!

      You can use a water bottle to easily separate the yoke and whites.
      All you need is an empty water bottle. Take the cap off, Squeeze it
      alittle then place the top over the yoke just until it's touching.
      Then un squeeze the bottle and the yoke will get sucked up into the bottle. :)

    I can't wait to make this! I am starting a carb cycling meal plan so this will be perfect. I don't like celery so I will do the meat with green pepper, onion, garlic, cilantro lime which is a basic sofrito. I just recently discovered coconut flour and its one of my new loves! Thanks.

    I made this and loved it! Instead of celery to thicken out the meat, I used bell peppers, onions, and corn. It was so delicious and flavorful. You can kind of taste the coconut flour but I liked it.

      Ok so I honestly love this recipe:
      Get potatos (sweet or regular) and cyt thinly (with a knife or whatever u like) they must be thin!!!!! They wont cook fully without it. So preheat your oven to like 350. Then put the thinly sliced potatoes on a pan, drizzle olive oil over them, not too much sp they arent soggy, and then put salt on them. Cook for about 15-30 min. Should work :)

    Omg Cassey....I loved that recipe. I made it today 7/18/13 it was delicious. I used chicken instead with garlic and onions....       I really don't like freelee, I've been to her channel and her website and actually was a follower for a few months but I couldn't stand the hate and the way I felt on the diet. I was just surprised how little this had in calories considering its counterparts in my local Mexican places probably have 1000+ and high fat content. Some meals or portions of my meals I rather have lower in calories because I will be getting those calories in somewhere else. However, I don't usually track calories unless I have to for medical reasons. My doctor wants to see where and how I'm getting my calories. I'm very sick and I do have a Mexican tooth if that's a thing at all. But I do go overboard. But if I can get it for less calories and then not worry about my calories for the rest of the day then I'm good. My doctor wants me to monitor my food to see why I gained weight so fast in two weeks(60lbs) and then a year later lost 40lbs without any reason or change in diet or exercise in three weeks. I eat relatively healthy, but again I have a weakness for Mexican. However when I gained weight I was actually trying to loose it, I was very active, but I became very ill with my kidney condition again, and new widespread of chronic pain. A year later after I got sick with pancreatitis and lost 10 lbs but gained it back to eating solids again, I randomly lost 40lbs in three weeks with no change to my diet or exercise. It was very weird. They still don't know what caused it but think it is my undiagnosed illness. Again though, I rarely like to count calories I just like to see fat, sodium, and cholesterol mostly. That's why I cook most of my food, and avoid processed. However sometimes it's unavoidable for me in my stage of life. I do like your apology. You were kind of rude, but it's okay. I'm sorry if I'm being rude as well.

    So I tried this, and my family loved it! Although, I added 1 cut up bellpepper with the celery which gave the Quesdilla a more zesty taste. It was also Very filling! I ate half of the Quesadilla, and was starting to get full. Definitely trying this again(: thank you for this recipe

    Love this video, and recipe. My only thing to say is NEVER SPRAY AEROSOLS OVER A FLAME..... The one, and only, time I did that.... I created a flame so high that I burned off 8 inches of hair and a beautiful scarf died that day. Wouldn't want you to go up in flames.

    Well, that recipe looks super yummy, really, it looks like a keeper. But I gotta say this, that is nowhere near to be a quesadilla, that is most like something we call Taco Árabe, without the arab factor. Also, flamenco music is from Spain (I love it just the same), Mexican music is more like mariachi stuff. I hope no one is getting offended by my comment, I'm just pointing out some details. Anyways, I love you love you love you, Cassey! You are changing my life and I'll try that recipe soon

    its totally okay to have carbs in our diet !! did you know that carbs must be 50% from the daily consumption while protein is about 20% (I'm talking about healthy people). At the end we need carbs (type of sugar) to burn fat. Protein is not a good source of energy if the body started burning it. Guys I'm saying this based on what I've learned in my 3 years of studying Nutrition and Public Health (yes i will be a nutritionist soon). And thanks Cassey for all your beautiful looking and delicious recipes

    well clean is not really a scientific term for food. And although I am vegan I can assure you this is a healthy meal. Turkey is splendid meat for light foods, the egg gives you extra protein (the BV should be above 100 here), and you have a bunch of vegetables.
    Can you please explain in which point this is unhealthy?

    Best place I've found that carries several of the various seasoning blends was at Walmart today for about $3 versus at Vons they were close to $5 and only had about half the different seasoning blends. I've also seen them at Stater Bros. and Fresh and Easy here in California. Hope you can find them :)

      I was wondering the same thing. And its easy to make homemade corn tortillas where I live, you can buy the corn dough already made, and its only whole corn kernels with water. :) Im definetly trying this!

    For people wondering about subs for coconut flour I think almond flour would work but you'll need to use double and a bit of the original quantity, as coconut flour is super absorbent!

    Casey, for the people with post traumatic stress disorder please keep food screams to the minimum; thank you. My two favorite videos of yours are 'Healthy Ice-Cream Cookie Sandwich,' as well as 'Victoria Secret model ab workout.' I think you might have also been one of the first You-tubers I followed who helped inspire me to begin my own fitness journey. Thank you for all that you've done to help inspire us (your viewers) to pursue our dreams and eat clean. I was also just wondering if you could make a few videos on vegan savory meals that are still healthy for you, like the video where you made pizza out of cauliflower?

    Could you also do a vid on common healthier ingredient substitutes (ex. coconut flour for regular flour)? A lot of people would like to eat healthier (but don't know where to start), and not compromise for flavour (I find that a lot of healthier choices are bland). Thanks Cassy!

    Just tried this. The tortillas are extremely dry but all thrown together, it adds a nice and unexpected taste. Doesn't taste like coconut at all - just mildly sweet. However, it takes MUCH more than 2TBSP of water to thin out the batter. More like 4TBSP or else it's much too thick to pour evenly. Making tortillas takes a lot of practice though. I think I'll only make my own because I spent so much on the coconut flour ($8/lb!). After that I'll buy my own. But the final product is yummy!

    Made this yesterday and it was delicious!! Just a little tip though: The seasoning you use will make a HUGE difference!! I used 'Season-All' and it was delicious c: Would definitely make this again, in fact, it's soo good I would definitely make this next time I have quests or there is a specail occasion! Enjoy! :DD

    I used a different flour, u can use any flour, but it will have more carbs. It still tasted AWESOME! Especially with guacamole. Yummmm

    This meal is legit! I eat it everyday! I use mrs dash table seasoning instead and low carb tortillas and it’s bomb!

    for waffles I use the pancake recipe she uses and I put it in a waffle maker- it's so good!

    You should get a bench scraper. They're super useful when transferring chopped stuff into a bowl and you don't use your knife to do it and that'll keep it sharper longer. :)
