Sounds like the pick up gear and spur surface is contacting each other lush making the spur gear sound louder. Whwm I do my own I always take sure the pick up gear isn't making any full surface contacts on spur by making sure the pick up gear is only just higher by 0.2 or 0.3 depending on make and thickness of spur and pick up gear. Could be that your spur gear is spot on but the pick up gear is making surface contact and no amount of grease will make it go away.
Turns out all my nerding in the video was wrong and things only happened to work out. I'll explain later sometime 10:53 there is no cutoff lever, I meant anti reversal latch
Gotta remember higher voltage allows to motor to work a lot more efficiently but increasing the rpms generates a lot more noise. I see guys run 30 to 35k motors or even high kv brushless motors. Krytacs 20k motor at 7.4v doing similar testing as you are is relatively quiet since it's not turning the same rpm as a 30k or 40k
Could you maybe explain the process from 0:00 - 1:17 maybe in a video/short/comment? If not, could you maybe point me towards a ressource from which I could learn this? I think it's really interesting! I have never seen anybody do this.
I'm using the acoustic readings from the app to try to identify which gear is making the most noise. The peaks tell me which frequencies are loudest and from knowing my motor speed and gear ratios i can figure that out. Problem is, I was doing it all wrong in the video 😭

In person it sounds pretty decent but on camera it isolated a lot of the higher pitched sounds and it makes me both worry and curious as to how me and my buddy did. try the "white nylon anti reversal". strong and it won't be noisy
