레시피는 외국 블로거님이 올려주신 걸 참고해 만들었는데, 저는 설탕량을 많이 줄이고 꿀을 조금 더 넣었어요~
시트를 1장씩 구워야 해서 시간과 정성이 많이 들어가지만 한번 먹으면 헤어 나올 수 없는, 계속 생각나는 맛인 것 같아요~*^^*
사워크림과 생크림을 섞은 크림이 상큼함을 더해 주고 여러 겹의 시트 사이에 접착제 같이 쫀쫀하게 잡아주네요~
냉장실에 보관하면 바삭한 시트에 크림이 스며들어 더 부드럽게 먹을 수 있더라구요~~ 저는 2시간 정도 넣었다가 먹었어요~
허니 케이크라서 집에 있는 벌집 모양 실리콘 틀을 이용해 모양을 내봤는데 귀엽더라구요~ㅎㅎㅎㅎ
색다른 케이크라서 만들면서도 재미있었고 맛보면서도 행복했답니다~^^

▶재료
무염 버터 113g
설탕 100g
꿀 3Ts (45ml)
달걀 3개
베이킹소다 12g
중력분 500g
사워크림 450g
슈가파우더 80g
휘핑한 생크림 (생크림 120g + 설탕 10g)
▶레시피
1. 뜨거운 물이 담긴 냄비에 볼을 올리고 무염버터, 설탕, 꿀을 넣고 버터가 녹을 때까지 섞는다.
2. 달걀을 풀고 반죽에 넣고 섞은 뒤 베이킹소다를 넣고 살짝 걸쭉해지고 색이 변할 때까지 섞은 뒤 냄비에서 내린다.
3. 중력분을 2~3번에 나눠 체 쳐 넣고 섞는다.
4. 반죽을 분할해 얇게 밀어 편 뒤 18cm로 찍는다.
5. 오븐 팬에 올려 190도 예열된 오븐에서 3~5분간 굽고 15cm틀로 찍어낸다. 반복해 굽는다.
6. 볼에 사워크림과 슈가파우더를 넣고 섞은 뒤 휘핑한 생크림을 넣고 섞는다.
7. 시트를 돌림판에 올리고 크림을 얇게 바른다. 반복해서 쌓는다.
8. 윗면과 옆면에 크림을 전체적으로 바르고 냉장실에 1시간 정도 넣어 둔다.
9. 틀로 찍어내고 남은 시트를 믹서기에 갈고 케이크 옆면과 윗면에 붙인다.

113g Unsalted butter
100g Sugar
3Ts(45ml) Honey
3 Egg
12g Baking soda
500g Plain flour
450g Sour Cream
80g Powdered sugar
Whipped cream (120g whipping cream + 10g sugar)

Everyone is asking what it tastes like. This cake is literally delicious. I hate everything sweet, but this thing is my biggest love. It has a very unobtrusive taste of honey and cream, the texture is very tender and it just melts in ur mouth. You'll never forget this thing if y try it.

epIx111333 not diabetes if u use sour cream between the layers. The taste is well balanced and not too sweet. The layers absorb the sour cream and feel soft and melt in the mouth

Jon Jonafun it’ll be soft and not dry. This dough is a little bit dry after cooking (sometimes it just like cookies). 12-24 hours in the fridge and it’ll be much tastier.

In Russia we call this cake "medovik" ("медовик"), and each grandma has her own receipt of it.

It's truly a Russian dessert? While I was on holiday in the Czech Republic I discovered medovik and loved it! Unfortunately it's not for sale here in the Netherlands. So perhaps I can make it myself with this recipe.
In Louisiana, every grandmother has a different recipe for gumbo.
Leviwosc As a Czech person, I can admit that this cake is very popular here. Noone really knows its origins, though. We call it 'medovník' here but most of the families don't make it themselves because it's kinda hard to prepare. I'm sure you can find it in Netherlands under the name 'Marlenka' - Czech brand, a bit pricey but it's the most delicious honey cake I've ever had. You probably had this brand during your visit in Czechia too because it's the only brand of honey cake our coffee shops sell 😊

Yeah, and it becomes more and more tasty with time. The first bit of it and the last one, if you eat medovik during a few days, are totaly different. The last piece is so soft and soaked and really even more delicious!

I've never been to Russia but I have tried this cake in other Eastern European countries. I still miss the taste of it so much. These are really good and there's nothing like it.

Every Russian FAMILY has its own recipe of Medovik. What’s more surprising, in Russia there are lots of variations of this cake. For instance, I add caramel in dough and it tastes just amazing!

You have to prepare all the ingredients before time, so it’s less stressful lol
In the traditional recipe we use sugared condensed milk instead of whipping cream and do not cool the cake.
It is common to let the cake "set in" for 24 hours before eating it, the longer you wait the more delicious it gets.
This "tradition" was due necessity. There was a scarcity of heavy cream in Soviet Union.
Oh that makes sense. Because the very first time I tried it in the UK, it had a slight hint of condensed milk and I got confused when every Russian cake recipe didn't include condensed milk

the results: It turned our excellent, my husband loved it, I also added 100g of honey since I wanted a stronger tasted and before I everything I warmed the honey and mixed it with baking soda for more authentic Russian taste but everything else I followed your recipe and it was spot on! thank you very much, you gained a viewer and a follower:)
Put it in the fridge for 6 hours minimum. Or there's no point of cooking it at all. Medovik is known for its softness, if you're eating dry medovik, you're eating wrong medovik.

This is a Slavic recipe, all grandmas in all Slavic countries make this and it's delicious!

The cake my mom always made for my birthday. Although she did not use sour cream. Instead I believe it was butter and boiled condensed milk. But I guess as a lot of people notes, recipe is different slightly for everyone.

I know the recipe is much lighter and tastier:
Flour-500 grams
3 eggs,
2 teaspoons of baking soda,
200 grams of butter or margarine, 4-5 tablespoons of honey,
1/2 cup sugar.
flour, eggs and soda mix in a large bowl, in a firebrush to give butter or margarine, honey and sugar = mix and on high heat to allow to boiland immediately add to the flour with eggs, quickly mix into the dough, so that it was easy to roll it out. Ready dough is divided into 6 parts and rolled into layers 2-4mm thick, oven at 200 degrees 4-5 minutes. let ready cakes cool. Cream: you can sour cream, cream of condensed milk, butter and sour cream or custard
How is it lighter? It has twice as much butter, the rest of the recipe is exactly the same. Not sure that the extra butter will make it tastier either...

Delicious cake! I couldn't make it as pretty as yours but it was fairly simple. I didn't add all of filling, which ultimately made my cake dry. Make sure to add all of the filling and refrigerate overnight. Very tasty cake.

The fact that you did not let it sit over night in the fridge and did not give the layers time to soak up a bit of moisture from the cream infuriates me so much. I can see the layer snap when you fork it... they are not suppose to... the texture of the cake is velvety and soft!! But otherwise looks good... just needs more time.
Domantas Totally agree with you. I thought it looked like waaay to much flour in the mix as well, but Idk. I've never tasted this cake, but it didn't make sense to me to make such a dense, cookie like dough for a layered cake
JeezRight its supposed to be like a graham cracker consistency when baked, and then it gets moist from the frosting. Its very nice its just supposed to sit a bit before hand

Agreed... it looked so thick when they were rolling it. And why bake each layer separately...? Just cut an actual cake into layers and then layer them with cream in between... like frosting on a cake in a bakery. Idk this recipe seemed needlessly complicated to me lol
You actually supposed to make the layers separately, because of extra-crust surface you'll get. If you bake the whole cake and then cut it into pieces - the surface of layers will be spongy, without any crust, and it'll get too moist and soaky after leaving it overnight to rest and soak up the moisture from cream (as it should be done).

My Russian grandmother watered each layer of the cake with rum. I was 11 and once I behaved inadequately and she realized that I ate the whole cake that she was cooking for my next day birthday. But today Im 25 and I still love rum version of this recipe :D

я знаю рецепт гораздо легче и вкуснее:мука- 500 грамм,яйца-3, пищевая сода-2 чайные ложки,масло или маргарин-200 грамм,мёд- 4-5 столовых ложек, сахар- 1/2 стакана. муку,яйца и соду смешать в большой миске, в кострульку дать масло или маргарин, мёд и сахар=перемешать и на большом огне дать вскипятить и сразу добавить в муку с яйцами,быстро перемешать в тесто, так чтобы было легко раскатывать его.Готовое тесто разделить на 6 частей и раскатываем в пласты толщиной 2-4мм, печь при 200 градусов 4-5 минут. дать готовым коржам остыть. Крем : можно сметанный крем, крем из сгущенки,масла и сметаны или заварной крем
