Can you please explain the cream cheese when you say 600g pink and 300-400g white. You said not to colour the cream cheese?
you've got a recipe for 1050 g of cream cheese, please color 600 g into pink and 400 g will remain natural color

Is the final pink frosting Cream cheese or Ganache ??
here it is cream cheese on video. Sometimes I make such cakes with ganache since when you need more saturated color it's better to use ganache. Cream cheese can get watery if you add too much color
What is the spray you are using on the cake ?
