I slice potatoes very thin using a mandoline, rinse them of starch in cold water, dry with paper towel or dish towel. Slice onion in mandoline as well. Mix potatoes with olive oil, salt & pepper, making sure all slices are coated. Oil a muffin tin, start layering with potatoes and adding onions occasionally. Drizzle each stack with a few drops of olive oil, cover with a bit of cheese. I used Pecorino. Bake around 375F for 40-45mins.
