    For breakfast, I enjoy zucchini sauteed with onions, then place fried eggs on top. A nice way to get in extra veggies.

    With the lasagna - I like doing lasagna rolls. I use fat free ricotta and mix spinach in with it. Cook lasagna noodles - spread ricotta mixture on each noodle and roll them up. Put in pan, cover with sauce and cheese then bake.
    It helps me with portions so I can be more accurate with points.
    I’m sure there are recipes online for lasagna rolls.

    I like to do a 1/4 cup of rice and the rest is cauliflower rice. I just buy the frozen bags. My husband doesn’t like cauliflower, but loves this rice combo

    Always love the Aldi haul videos Kristi..!! Aldi and Save a Lot are two of my absolute favorite grocery stores!!     I have an Aldi by me and I’ve never been there! I think it intimidates me because I’m not sure how it works. Great food. I need to get you veggie containers.

      Ohhhh, please go!! You just shop there like any other grocery store, except when you check out, they just put everything back in your cart and you have to bag it all up yourself - or put it in a box or whatever you prefer. Our Aldi has the most amazing meats and produce!!

    For your lasagne I like making it with thin sliced zucchini instead of pasta but if you like the pasta you could alternate zucchini with pasta layers...so you'd be using half the pasta.

      I agree! It seems like you get a lot more this way rather than doing the weekly hauls. This way, I may just need a couple things each week, but for the most part, I can make a ton of meals with all this. Thanks, my friend! 💕

    We had those chicken egg rolls tonight. I liked them and I generally do not enjoy egg rolls. I thought they were much better than the feel good foods egg rolls that I think you may have shown before from Walmart. I like buying that gulf shrimp from Aldi as well, I feel better about consuming USA shrimp and Aldi is the only place I find it. I love your hauls (and all your other videos)

    I'm on team no cilantro like your husband lol. We just got an Aldi. Grand opening was Thursday. I'm trying to wait until the newness wears off but after seeing your haul, I'm ready to go! I agree that 300 for all that food is darn good! Thank you 😊

      Haha! It's so funny how people either love it or hate it. I've heard there's some genetic thing that has to do with whether you like it or not. Strange. Anyway, you're going to LOVE Aldi!! I literally could spend hours in there. (Well, I actually did spend two hours there with this haul, but a lot of that was bagging it up - you have to bag it yourself - that's how they save money).       @@PlanningUsHealthy I'm going this afternoon. I heard to bring my own bags. I feel like a kids getting ready to go to Disney World 😂. I heard a long time ago that people and cilantro. It's a 50/50 thing and it has something to do with genetics. 50% think it taste like soap

    Have you tried zucchini lasagna? You use slowly sliced zucchini in place of pasta.

      I haven't tried it for lasagna yet, but I have done lasagna rolls with it and it was pretty good! I have a lasagna sheet maker for zucchini sitting in my cabinet that I have never used - may have to get it out and give it a go! Thanks Gina! 😊

    If you love zucchini, you should make Meghan Markle's filthy sexy zucchini pasta sauce. it takes a long time to make, but can be made in a slow cooker, but it's a simple recipe and the sauce itself has 0 points. This recipe looks like a lot, but it cooks down so trust the process.
    5-6 large zucchini or a combination of zucchini and yellow squash, sliced
    1 medium to large yellow onion, chopped
    2 bouillon cubes of choice (she used vegetable but beef or chicken will work as well)
    1/2 cup water
    salt and pepper to taste, but is optional
    pinch of chili flakes is optional
    garlic powder or minced garlic to taste, not included in her recipe but I found it a little bland, so I add it.
    Pasta of choice but she recommended pene or rigatoni
    In a large slow cooker or a dutch oven, add zucchini, onion, bouillon cubes and water. Season with salt and pepper, if desired. Set timer to cook for four hours on low heat, stirring once or twice in that timeframe. The zucchini will start to get nice and mushy - that’s what you want! At the 3 hour and 40 minute mark, cook the pasta in a separate pot according to package instructions. Season the zucchini sauce with salt and pepper, red pepper flakes and Parmesan cheese, if desired. Serve immediately over pasta.
    For lasagna we add a ton of vegetables into our meat sauce. Onions, mushrooms, bell peppers, grated carrot, sliced or grated zucchini, diced or sliced celery and sometimes even chopped spinach gets added and on occasion some diced eggplant. It bulks up the sauce, adds extra nutrition, you're not adding any extra points into it and if you are worried your family might not eat all those veggies you can grab a hand held stick blender and just puree it into the sauce before you add in your meat. They won't know plus the carrots give a little added sweetness to the sauce.
    I have seen recipes making a sauce out of roasted red peppers or butternut squash for lasagna. I have always wanted to try alternating layers of lasagna noodles and then the next layer of *noodles* to be zucchini sliced on the length or maybe even eggplant. I have always used cottage cheese instead of ricotta. Taste wise you don't notice it, it blends in just as well and has a similar taste to ricotta once cooked. There might be a slight textural difference depending on the type of cottage cheese you are using. if it's really liquidy, you may want to drain off some of that extra liquid.
