Made this cake because I was looking for a chocolate cake with white frosting so I can turn it into an ombre cake. It did not disappoint and everyone loved it. Not to sweet plus the cashews and marshmallows give it a nice texture. Yum! Thanks Kurt and hubby for this recipe. :)

Hello again! A month ago, I followed your Mango Supreme Cake which was a huge hit! 💛and then recently I made this Rocky Road cake for my birthday celebration. 🎉 I am so happy to find this recipe. It turned out so well that we could not resist it 😂. The overall sweetness of the cake was just perfect especially the chocolate frosting. Hi Vissa - unfortunately other creams like whipping cream, evaporated milk, or Nestle all-purpose cream cannot be used as a substitute for heavy cream, as it doesn’t have a high enough fat content. Heavy cream has a higher fat content (about 35-40% fat content), which is needed for the frosting to whip into stiff peaks and remain stable at room temperature. If the cream you're using has lower than 35-40% fat, it will not form stiff peaks. So make sure you're actually using cold "heavy cream" - also called "thick cream" in some countries. And it needs to be very cold before whipping. If heavy cream is not available, I’d suggest making a Swiss-meringue buttercream frosting instead. Hope this helps! :)

Love it i will try it soon.Im happy for you that you are now using a stand mixer im already your follower from the time you are using a foil strip for the cake not to have a dome and using a hand mixer which i learned a lot btw.All of your recipe walang palpak pag ginawa because you give the instruction clearly i thank you for that.Continue doing it you help a lot of people who loves baking like me.

Wow its looks delicious and I want to make it on the birthday of my sons thia coming month but I wonder how to make the buttermilk because when I search on google they are different ways that why I want to know your way please🙏🙏
Hi Luz - in the US where I live, buttermilk is available in the grocery store, which is what I use for my recipes. I have not personally tried any buttermilk substitutes. From what I've read if buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup regular milk. Hope this helps!

If the cream you're using has lower than 35-40% fat, it will not form stiff peaks. So make sure you're actually using cold "heavy cream" - also called "thick cream" in some countries. And it needs to be very cold before whipping.
If heavy cream is not available, I’d suggest making a Swiss-meringue buttercream frosting instead. Hope this helps! :)

Hi Luz - in the US where I live, buttermilk is available in the grocery store, which is what I use for my recipes. I have not personally tried any buttermilk substitutes.
From what I've read if buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup regular milk. Hope this helps!
