Vegan Cheesesteak Made From Soy Curls!

  • Ever since my diagnosis I’ve been on an anti inflammatory diet, which means:
    No meat, no dairy, no eggs, alcohol, refined sugar, wheat, corn, and pretty much all of the stuff I used to love.
    However, my wife and I have have been on a mission to recreate some of my all time favorites using diet approved ingredients.
    Today I take on my favorite meal ever: the cheesesteak. This has been an elusive one for me, but I may have finally cracked the code. The secret weapon: soy curls!
    Note: the roll I ate my steak with was made by my wife from gluten free flour. The roll in the video is a normal club roll. Kids and wife can still eat wheat/gluten.
    Recipe (I made this for my family of 6 and it probably made 10 sandwiches):
    Toppings:
    One big a$$ yellow onion
    Two large portabello caps (optional)
    3 cloves of garlic
    Meat:
    12 oz of dried soy curls. Makes about 2.25 lbs of “meat” after rehydration
    Meat sauce:
    8 TBS coconut aminos
    4 TBS blackstrap molasses
    4 TBS tomato paste
    Garlic powder to taste
    Crushed black pepper to taste
    Salt or mushroom umami powder
    Split this sauce on two and cook the soy curls in two batches
    Whiz:
    2 TBS vegan butter
    2TBS all purpose GF flour
    6 oz violife shredded cheddar
    You can add more cheese if you like it cheesier.

    I’m 62 and vegan for 7 years. I went to college back in the 80s in the Philadelphia area. I ate a lot of Philly cheesesteaks while pulling “all-nighters” writing papers. I wasn’t vegan then. Glad to see this vegan version.

      I was a California gal and never knew about the Philly sandwich. But planning a trip to Philly I found a Vegan place that had the sandwich and cannoli! You went up to the counter and they made the sandwich for you. They asked me what I wanted in it! Not being familiar, I had them leave out the bell pepper and onion🤣😂. The cannolis were good tho! Now I make them with TraderJoe’s Vegan Bulgogi and all the fixings. I haven’t tried soy curls yet.

    that flavor profile is what will convert everyone, #1: cheese, #2: meat, #3: starch, now the soy curl makes that shape of mince steak meat without a seitan aftertaste or high price point in addition to being more accessible.

    Looks great. I remember the old days when I was at Villanova and they had a guy from one of the local hoagie jawns visit the dorms around 8 pm with the meat version and a “Hoagiessss!!!”hawker bellow.
    We now make these at home here in Delaware in a similar fashion as you’ve demonstrated here. Btw, get that knife sharpened up- you can control sharp knives easier than dull ones. Just sayin’. 👍

      A1 is a GREAT addition. A little worstershire would also probably be good! I couldn’t use those because of the sugar, but I bet they’d be delicious 😋

    Hydrating the curls with vegan beef broth instead of water puts you way ahead of the game

      Yes.. whether chickenless or beefless. Let it soak for about 30 min then squeeze out moisture and start cooking however you are using it

      My favorite vegan UA-cam chef Thee Burger Dude says hydrating with broth is a bad idea.

      and then use the leftover soaking liquid to clean your stove!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

    THANKS for the recipe!!! DELICIOUS with no gluten, etc. Just-in-case>>> I like "SIETE" brand (gluten-free) products. I like to share the wealth, especially from a family business. No I don't work for them, I just like their taco shells and queso nacho sauce. This nacho sauce is found in the fridge... I used it heated for an easy heated vegan cheese whiz. Siete has other products, too. (You'll notice my name listed as "first last", because I'm a private person. THANX AGAIN!!!

    How long do you hydrate these for? Do u squeeze out water?

      10 minute soak. Strain and then squeeze excess water.

    Is it just me or does soy curls leave a wheat gluten flavor even after seasoning? Does anyone know how to get rid of that flavor?

    Onions are purple not red
