Here's something I've noticed. If you place your cannons at the flattest piece of land you can find, the enemy infantry will walk head first into them. Switch off fire at will, until the enemy is close enough. Then, switch to canister shot, and switch on fire at will. Also, make sure there's some infantry to support your artillery.
For all those that have a hard time winning, even against the AI, it's likely because you aren't experienced enough to manage your whole army at the same time. Train against a normal AI with an army small enough for you to be able to manage every unit and have a clear understanding of what's going on (it can be smaller than the "small" battle setting if you need so), also play on grassy flatland where you can't hide and give your opponent the same army as yours (so you know what to expect from it). In battle follow the instructions of the video to fight efficiently. When you can defeat the AI multiple time and with many troops remaining, increase the size of your army. Once you can beat the AI without ANY effort with at least the small army battle setting, you can try training in multiplayer with small armies. Always learn to manage more troops against the AI before going multi with a bigger army. Tips : Unlike in the video, stretch your line as much as possible to allow more soldier to fire at once.
You have to predict where the enemy will break and then react quickly when the opportunity arises. You also need to make sure that your attacking force doesn't run into a wall by micromanaging them. Using the map is also a good idea as you can quickly tell whether the enemy is trying to do something like flank you

Dont every charge your cavalry if your line infantry are firing stop your line infantry from firing otherwise your cavalry will receive friendly fire

Try putting your line infantry off of "fire at will" because on this setting they will shoot at enemy units regardless of friendlies in the way

You may use a mod for that. :)
You can adjust the number of units in settings, alternatively try darthmod with regiments of 360-500 men
