EASY Oven-Roasted Sweet Potatoes

    Delicious and super-easy-to-make oven roasted sweet potatoes made with fresh herbs and butter! This dish will fill our kitchen with amazing aroma and will be gone in minutes; my favorite side dish!
    Peeled, cubed sweet potatoes
    salt, fresh ground black pepper
    fresh thyme, fresh rosemary
    dried basil, garlic powder, smoked paprika
    butter, 1 tablespoon per potato
    avocado oil or olive oil, 1 tablespoon per potato
    INSTRUCTIONS
    1. There are two different ways of preparing oven-roasted sweet potatoes. The first method is the one I used in my video recipe, which involves cooking the potatoes first, then seasoning them with butter and spices. This method works well if you need the sweet potatoes to be extra soft. Preheat oven to 350F. Place sweet potatoes into large pot filled with water. Bring to a simmer and cook for 8 to 10 minutes, just until the potatoes start to become tender. Drain water.
    2. Toss together potatoes with melted butter and oil, herbs, salt and black pepper. Bake in preheated oven until fork-tender and golden brown, about 15 to 18 minutes. Broil for a few minutes on high heat to make the potatoes extra golden. Remove and transfer into serving bowl.
    3. Method 2: The second method and the one I currently use requires less work. Just spread the raw sweet potatoes onto a baking sheet. Pour butter or olive oil over the potatoes, then add the seasonings, toss everything together and cover the pan with foil! Set your oven to 425F and roast the sweet potatoes covered for about 20 minutes, then remove the foil and bake for another 10 minutes. For more color, broil under high temperature for a few minutes.

    To all my viewers: I have had many comments regarding the amount of salt I added in this recipe. Each salt shaker/dispenser is different, mine dispenses very fine granules very little at a time. Please make note I am NOT adding an exorbitant amount of salt. Please add salt to taste; you can always add more if needed. thank you!

      When boiling it's absolutely fine to add that amount of salt. Sweet potatoes will just absorb how much it needs

    I had 4 lbs of sweet potatos. Cut them an inch all around (squares). Boiled for 8 min. Oven at 450, and 25 min. Hope that helps someone out there. Also dont use too much salt lol. I think that should be a roughly good amount of time and tenderness of the sweet potatoes

    Thanks for the recipe, I made this for turkey day and if I did use plenty of salt, the sweetness of the potatoe brought it to a happy medium.
    My wife whom hates sweet potatoes, actually said these were excellent, blew me away.

    I tried this recipe last night and it was such a great side dish!! If you have a very old stove like mine, you'll want to only boil for 5 mins otherwise it gets too soft too quickly. Other than that little setback, the SP still tasted great!! I also used Rosemary essential oil because it's hard to find fresh Rosemary in the countryside here. Thank you for this x

      Don’t know which part of the world you live but rosemary is very easy to grow if that’s something you’de like to do. I live in Scotland, picked a bit off my friends plant and stick it in the ground, and it is now the size of a small tree. It thrives in our climate.

    After boiling the potato chunks, use a collinder to "fluff up" the potatoes. Just shake them in the collinder until they get a light fluffing to them do this after adding the herbs and spices and oils. Bang then straight into the oven, they'll get wonderfully crisp without having to use the Grill (Broiler). Fluffing up the roasties is a staple of a good roast potato in the UK. :)

    Making me hungry, I usually just do rosemary (my favorite spice), salt and pepper and olive oil. I like the idea of boiling fist. If I had seen this video before I went to grocery store I would have picked up some of the avocado oil. Will try next time, going to also add the paparika. Thank you.

    I'm your new subscriber, love your ideas, I am a quadriplegic, so I am not proud to say that I have only ever cooked my beau a meal with help from my carers a hand full of times in nr 10yrs, so any quick easy healthy dishes would be greatly appreciated. Tyfs ,and as said below you do such great clips, it would be good to see you tie back your hair,as lovely as it is. You are influencing so many,I'd like to think they follow by example, or at least mention it's recommended.x

    I made these to throw into my veggie salad and they are delicious!! (I didn't use the fresh herbs because I didn't have any and I used olive oil because that it what I had on hand)

    For those monitoring salt intake use less salt. This is a great video. I have never used salt on sweet potatoes. I will try with less salt for me. Everyone taste buds are different. Thanks again for sharing your recipe.🍠

    That's really NOT that much salt, she is using the low sodium Morton salt that's got Potassium Chloride instead of NaCl, simmer down!

    I love making my sweet potatoes stove top or in the oven with coconut oil, coconut sugar or pure maple, a little sea salt, cinnamon and rosemary!
