It's hard to say the excat mix for the pin kerbs as we use all the waste mortar from the build and the washings from the mixer we add a bit of stone and couple bags of cement per mix, as the washings and waste still has cement in it that reacts it ends up pretty strong, but if ordering sand and stone for mix we'd use 1part cement 2 parts coarse sand 3 parts 20mm stone mixing gradually with water untill very tacky
Most people usba seminary kerb mix from the concrete plant, however I find it lacks strength, so I mix my own on site at 1 bag cement 4 bags stone 2 bags of sand, slightly wetter than seminary sets up like stone, yes I would set kerbs first l, just make sure if using bricks or flags stones you measure from the other side for full bricks or kerb stones to save alot of cutting
