Loving your India series. I just want to say that whenever you have snacks like samosa, pakora, bhaji, always asks for chutneies. They should usually provide mint or sweet chutney without asking, but many times they don't provide. Try Dahi puri, samosa chat, chole bhature, biriyani, Kashmiri pulao, malay kofta, Raj Kachori in a restaurant. In India restaurants like Haldiram, Bikanerwala are good for trying varieties of street food and they are very hygienic, and they have branches in many Indian cities. Don't eat much street food directly from street stalls as it may effect your health. Two or three in a day is fine. Always have one proper simple meal like Thali.

There you can try different food , culture, clothing and everything the vibe is completely different than other states North East India is so different in general.

The dish you were having after the juice is known as litti chokha(chokha is made of mashed potatoes with some herbs mustard oil and some green chillies and raw onion in it) and litti that was ball shaped is made by wheat flour shell and stuffed inside is roasted chickpeas flour called sattu

Thats why shopkeeper said that he opens this shops for 3 months. 20:15 is utthapam which is south indian dish. It is available in varanasi because south indian people also visit this ancient religious place. 36:40 is aam papad made with mango purie sun dried in layers. 49:04 is not baklava but soan papdi made up of chickpea flour . Its flaky because of the making process.
