Literally since childhood, when I've picked the pith from oranges, I've wondered "Is there a chemical to get rid of this to leave a perfect segment?"
MY JOURNEY IS FINALLY COMPLETE, THANK YOU.

I just saw someone on tiktok doing this the loooong way for a fancy restaurant by peeling the pith away with a knife. Someone in the comments suggested this enzyme and it seems amazing!

I tried this and it turned out pretty well, but I think soaking in water leached out some flavor. Have you tried combining this with orange juice clarification (e.g. mandarin pieces + orange juice + pectinase, wait, clean + remove mandarins, strain orange juice)?

Sounds genius. If it does work, imagine using another juice..blood orange juice with tangerine segments? 🤤

for a cheap alternative, you can use baking soda. Justslightly bring the water to boil, put the fruit & and leave it for 5-10' (Depends on the quantity) , once done, rinse off in water & voila, you're done
