I made this last weekend. Fabulous! I made a couple of modifications - for the 1 1/4 cups of milk, I made a combination of milk, sour cream and heavy cream because I had a mix of dairy to use up. I used about 1 cup of frozen corn, thawed in the microwave and well drained. I decorated the top with sliced and seeded jalapenos from my garden and a couple of sliced and seeded grape tomatoes. It makes a beautiful presentation! (Sorry I was unable to insert a photo:(

I just added more milk (prob 1 and 3/4 cups) and it seemed to turn out ok. Also, I will def use more jalapenos and cheese and less sugar (as you suggest) next time. I do have a website, but it's very neglected. Most of the recipes I have posted here are not on there, for lack of time and help. Hopefully I can get some help over the summer to update it. I hope to make the recipes printable on the website at some point. 🙂
John Cipriano Actually, fresh corn cooks so fast there shouldn't be a problem. Corn picked fresh from the garden can be eaten right there in the garden. No cooking. I like to heat a pot of salted water and put the corn in and turn the heat off. Let it sit until you get the table set then drain, add butter and enjoy. Or, you can wrap a ear of corn in plastic wrap with or without salt and butter put in the microwave for a couple of minutes . Also it makes the silks easier to remove when you microwave it. When I was a kid we used to split the kernels before cutting it off the cob when making creamed corn. Don't scrape the cob because it makes the dish easier to scorch while cooking. My husband loves corn so much he could eat it every day. The best corn we've eaten was standing in the garden and eating it right off the cob. No salt or butter. Hopefully this is not TMI. Too much information.
