Mexican Cornbread | Jalapeño Cheese Cornbread

Today I’m baking up Mexican cornbread the cornbread is filled with jalapeño and cheese and corn the perfect side with beef chili or a bowl of beans I hope y’all give it a try it truly is delicious!

What you will be needing
Large cast iron skillet
2 tablespoons shortening for skillet
2 cups selfrising yellow cornmeal mix
1 cup all purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
2 cups buttermilk
1/2 cup water
2 beaten large eggs
3 tablespoons melted butter
1/2 cup chopped jalapeños
1 tablespoon dried onion
1 cup southwestern corn or regular
1 cup shredded mild cheddar cheese
Bake at 425F
