How to make Gooseberry Fool

- Fools are SO delicious and SO easy! This method for gooseberry fool works with any fruit that you could grow in your garden.
For a pudding that serves 6 generously :
400g gooseberries
75g honey or sugar (to your taste)
300ml (or the size of a small carton) double or whipping cream. If you’re avoiding dairy, you could use coconut cream here - totally lovely.
Optional: 1 egg, separated, and the white beaten to stiff peaks
Dollop of natural yoghurt
Shavings of lemon/lime zest. A dash of elderflower cordial. Gratings of ginger?
Method: 1.Stew your gooseberries with a little water (just to stop them sticking), and your chosen sweetener and leave to cool for at least half an hour. Then mash them with a potato masher, or whizz with a stick blender. The colour will be deeply unappetising at this stage!
2. Beat your egg white, and whip your cream to soft peaks (in separate bowls!)
3. Mix cream and gooseberries in a large bowl. This is your FOOL!
4 Add the beaten egg white, and it’s yolk.
5. Add the yoghurt, if using.
6. Put the mixture into the fridge in the dish it is to be served in (I like individuals), and you’re done!

I just read a story where an inn keeper was going to make Gooseberry fool. I had to look it up 😊 I have no idea where I would find gooseberries, but it looks good! Thank you for sharing. From southern California
