Looks like you've nailed it Dr,I find the trouble with brewing lager the traditional way is that they take so bloody long. I assume because it was fermented under pressure that it sped up the entire process?

Well the heat speeds it up. My theory is that the hotter fermentation dosent produce any sulphur. And the esters are kept low with the pressure. And the yeast really like work hot so diacetyl ain't a problem either. Gonna explore it more. Cheers and thanks!
Is there any video where you explain how pressure termination works and how you are able to have a fast fermentation? I just ordered the fermzilla and I want to use it but im kinda lost on where to even begin. Do I even need a spunding valve? Or could I just hook up my ball lock gas ? How would you even dry hop a beer if you finish it in. 3 days?

I've had salted liquorice before which I liked but I assume this is extreme salt levels!

This is an old video, it was a nice beer from start to finish. I kept one bottle which I tried on my new years party live stream this year 1.5 years later. It wasn't that good anymore 🤣🍻

I am all for speeding up the lagering process especially considering that I don't have a dedicated lagering fridge and instead have to use my kegerator for the task thus preventing me from using my kegerator during that time. :(

I heard a podcast on beersmith discuss about fermenting under pressure and how it stops the sulphur taste. Think they tried at different pressures and the 20psi??? or something was the best. Worth checking out if you haven't already.
Don’t know if it’s the same I heard. Maybe not cause I think it was a video. Can’t remember them trying different pressures though.

Cool video Dr! I thought the 34/70 yeast was a hybrid ale/larger yeast - there was a podcast or two about it a number of months ago. It was all a little complicated but basically (if I remember correctly) 34/70 is the Weihenstephan strain which is a hybrid (genetically) of saccharomyces pastorianus (lager) and saccharomyces cerevisiae (ale). If you look on the packet of 34/70 it actually states the temperature range of 9-22C! Very interested to start experimenting with fermentation under pressure. Come on Fermentasaurus 2! Cheers!

There was also some research done by Chris White (I think) in conjunction with Blichmann about fermenting under pressure and the suppression of esters etc. Think it was a recent beersmith podcast. Worth a listen.
Yes, it is! My theory is that by fermenting hot I don´t get the sulfur that you normally may want to lager away. And by fermenting under pressure I keep the esters in control as well.
DrHans Brewery I'd say that the clean ferment is more to do with this particular strain of lager yeast being temperature tolerant and fermenting under pressure helps with ester suppression. Would be interested to see if this works with other lager yeasts.
Stass Brewing it is mixed with MJ Bohemian lager.

Could you maybe, make speedbrewing grain to glass pale ale video, maybe round 5%abv, i think it would be interesting to see how fast it could be done because, it can tolerate higher Temps while fermenting, and temping up would be logical as part of diacetyl rest, and maybe a hop tea addition instead of a hop stand, because i think the aroma would be better preserved, it wouldn't vapor off.

Well good Dr it certainly tasted like a lager to me my friend. Sorry after quite a few hectic work/family days finally got round to viewing this. Which is strange as I just love watching myself on video (NOT).
It was a quality beer Dr - lemony/malty just a great lager in my opinion.

I’d say if it looks & tastes like a lager and brewed with lager yeast and you want to call it a lager then yes. Equally I’d also say if you want to call it an ale then you can. Craft brewing is about breaking the rules and experimenting. I think you nailed this and proved that it can be done. No doubt others will disagree and if that is the case just call it a Hybrid. Amazing work Dr and please never ever send me those disgusting sweets again they taste like salty cat piss (not that I’ve ever had fat piss)

Dr. Hans! Help! I am approaching 2.5 days brewing a lager under pressure and have not see any activity thus far? About much yeast is needed? The wort is becoming carbonated. Can I just repitch more yeast and start fermentation? Does it need to be de-gassed?

@@grantwarmoth1551 I would pitch it as a normally pitch an ale. About 1g per liter if where talking about dry yeast. If you haven't any activity the wort can't get carbonated. If you don't have the guts to wait any longer (it should have started by now) more yeast won't hurt it. What are you fermenting in?
In a corny keg. I was pressurized to 2 bar.

You will probably at least spend a $1000. With that said you can get into homebrewing on a very small budget.

The only alternative to it being a lager is that it's an ale, but ale is brewed with ale yeast. My vote is it has to be called a lager, but I don't know what sub-category it would be.

I wished I could have made a poll that would have been cool. Bigger youtube channels have that feature but mine is to small.
This is just crazy, i recently bought myself a grainfather and have no prior experience with brewing and i am a Hauge lager man. Ive grotten a understanding that lagers are the hardest but i love lager so im gong to focus on that. Ive become a patron to get as much information about this as i can, so i have got hold og the recipe, but of course the fermentation here is everything i guess. You will not be able to do this without pressure and temp control. I bow myself in the dust, this is exactly wy i want to brew beer, i am of course interested in other beerstyles and i cant wait to Get started 😁😁
Lager or ale, i could not care less. This sertainly looks like the pilsner i love so much. I will brew this until i make it. Hur kommer det sig att du kör på 2 bar när du jäser? När man läser omkring så verkar normen vara att köra på 1 bar.
Det vart någon misstolkning någonstans av Whitelabs test och folk trodde att 1bar var sweet spot. Vad det testat egentligen visade om man tänker efter är ju mer ju bättre. Min tank fungerar upp till 2.4 bar. Jag tycker det fungerar väldigt bra så högt.

skipped to ferment temp on video.....you fermented at 75F?....um....its not a lager, sorry. 50 degF max, for a week, then 65 for a diacetyl rest, then in the fridge for at least a month.....thats how you make a lager, kids.....get a glycol chiller and skip trying to regulate a refrigerator designed for keeping food cold, not fermenting beer.
