    CARIBBEAN RICE AND BEANS INGREDIENTS
    ¼ cup vegetable oil (or canola)
    2-3 garlic clove , minced
    ½ medium onion , diced
    2 teaspoons creole spice Homemade recipe here
    2 cups uncooked long grain rice
    1 sprig fresh thyme or 1 teaspoon dried thyme
    13.5 oz can (1 3/4 cups) coconut milk
    15.5 oz can red kidney beans , rinsed and drained
    2 small bay leaves
    salt and fresh ground pepper , to taste
    2 1/4 cups chicken broth or water (see notes)
    1 teaspoon chicken bouillon (optional)
    1 whole scotch bonnet pepper.
    1 teaspoons paprika (optional)

    I just made red beans and rice from a vegan site and I felt it really needed more flavor. I can see where adding your creole would enhance the dish. Ill try your recipe next time.

    Pls could you do oven baked Nigerian fried rice? Also quinoa jollof too?

    Oh my goodness this dish is SO GOOD! We loved it! Had it with your peri peri chicken (YUM)
    and your pineapple cucumber salad (which is delightful snd unique, to me!).
    A great company meal. Three new recipes that I tried all at once which was a brave move but
    which totally worked and delighted us all. THANK YOU !

    It’s actually Jamaican in the southern Caribbean, red kidney beans aren’t traditionally cooked with rice, we cook it separately. We use pigeon peas or even lentils.

    Was the rice cooked before you added it to the pan?

      I use uncooked long grain rice. No need to parboil, just rinse it until water runs clear.
