I have never been given the head at any of the shops in Kaohsiung...also, that mixed stir fry duck looks so much better than what we have here in Kaohsiung, ours is always loaded with basil, no onion, and coated with what seems to be a thick sugary sauce of some sort, that looks much healthier!

In a restaurant in Taichung, sliced duck with white scallion paste pastry (thick q homemade), fried duck rack with nine layers of pagoda garlic and scallions. At a restaurant in Zhunan, sliced duck with white scallion (if scallion is expensive, half scallion and half onion will be served) and pancake crust (moistened, thin). Duck head and neck, some stores will only give customers a whole duck (extra charge), others buy half a duck, one I usually cook it straight with the rack. Some restaurants will also serve three dishes, in addition to sliced duck stir-fried duck rack, or boiled soup (not common), and usually buy whole.

雖然都是在台灣，但或多或少還是有差。
在台中某店，片鴨附蔥白段 醬 餅皮(厚q自製)，炒鴨架用九層塔 蒜頭 蔥。在竹南某店，片鴨附蔥白段(蔥貴的話，會一半蔥白一半洋蔥) 醬 餅皮(潤餅皮，薄)。
鴨頭和鴨脖，有些店會只給買整隻鴨的客人(單買另外收錢)，有些店買半隻就給了，一般會直接跟鴨架一起炒。
有些店還會有三吃，除片鴨 炒鴨架外，還有煮湯(不常見)，而且通常要買整隻。
