Pavlova in Australia we have every Christmas. I'm not a dark chocolate lover as it don't agree with me but I could always swap out choc filling for the traditional cream with a dash of vanilla in it with the berries. Looks beautiful x

I will definitely be doing it again at Christmas but I have been told by my family I have to make more than one because it's so delicious therefore I am thinking of making individual ones & maybe do some with peaches or pears on top as an alternative. Oh, no! I'm so sorry your meringue didn't turn out! Make sure your mixing bowl is super clean - I wash mine with vinegar before making meringue. And once you add the chocolate, don't mix for too long, just until the powder is incorporated. If the cream isn't holding well, place it into the fridge for 20 minutes, then whisk again.

I love your video. I would like my pavlova looks like yours. I wonder how do I get meringue still stiff like yours after adding the cocoa. My Meringue layers was too watery and the kisses looked like macarons jejeje.
Make sure your mixing bowl is super clean, any amount of fat or grease will cause it fall flat. I wash my bowl with soap and vinegar before mixing. Once you add the cocoa, mix only for 30 seconds to 1 minute and fold by hand if it needs more mixing. The cocoa has fat and it will cause it to fall if you mix it in for too long

Yes, it will affect the meringue. I don't recommend reducing the sugar in the meringue but you can reduce the sugar in the frosting :) Yes, whipped cream will be perfect :)
This looks amazing! I Just saw another recipe for pavlova that You made with levander cream, it is a little different and You bake it for 2hours not 3...wich one do You recommend?
Thank you! For this cake, you will need to bake for 3 hours because you'll want the layers more crispy/drier. The one with lavender cream is a little more gooey in the center :)
I haven't tried using pasteurized egg whites but if you've used them with success, then they should work just fine for this recipe! :) Or, you an use the egg yolks for my chocolate French buttercream!
Is the inside supposed to be crunchy? That sounds over cooked. I thought pavlovas are supposed to have a crunchy exterior and the inside is supposed to be a marshmallow texture.
This recipe is slightly different from traditional Pavlovas, it's more of a meringue. If you want the center to be soft, you can certainly do that by taking it out of the oven earlier :)
This is not pavlova is simple merengue. Pavlova merengue has vinegar and corn flower added to the mixture and is baked differently. Still, it looks amazing, but not Pavlolva. Just merengue cake.

The cream of tartar that I added to stabilize the egg whites acts the same way as adding vinegar and corn flower :)

I love mascarpone cheese but it can be pretty expensive here. You can always replace cream cheese with mascarpone :)
