How do you make it smokey without using firewood? I accidentally made smoky jollof some years ago. I turned up the heat a bit too much and it got burnt at the bottom, infusing the smoke into the rest of the rice! I don't think I'll do that again, though.
Peeps i tried jollof rice and it was honestly not good. I used a rice cooker and my rice was crunchy. My fault as i dont have a pan for oven use. Also rice was not cooked because there is no moisture through water as the paste like liquid is too thick to be absorbed. What you NEED TO DO is definitely put an aluminium foil over and the steam will help to cook the rice. This is what I did and it was edible. So disappointed 😞 and the taste of jollof is not good. 165g of Tomato paste by itself is acidic and didn't flavour rice in the right way. The authentic recipe of jollof rice does not contain tomato paste. I recommend you use very little maybe just 1 tablespoon or do not use at all. I understand this is her rendition and its not wrong but if you are new to jollof like i am the tomato paste can be overwhelming for you. This is something I won't be making again. No disrespect meant. Just my personal opinion. Maybe i will try this at a restaurant instead but from where i am from its hard to find a Nigerian restaurant. 😢 I liked the chicken though, the smell is amazing although it's a bit dry to eat on its own. Adjust your oven temperature so you dont dry out the chicken.

Also one more thing to note is 750g of chicken with 2.5 cups of rice is definitely inconsistent! You will end up with too much of rice with not enough chicken like I did 😂. I would say make 1.5kg chicken with this much of rice or lessen your rice to 1.5 cup for 750g of chicken. Your welcome
