Hi Karla. All 3 of your fabrics are Zweigart fabrics. You can tell by the orange stripe on the salvage edge. On 20 ct my personal preference is 1 strand. It covers well. Just an FYI. The 20 ct Bellana is the same fabric as a 20 ct Lugana. For some reason in Europe they have kept the names of Bellana (20 ct). Murano (32 ct). Brittany (28 ct). Where here in the US. They are all called Lugana.. but it is exactly the same fabric. Aida by Zweigart is usually always softer than other brands. Again my preference will always be fabrics by Zweigart. Don't forget that the gridded fabric will have to be soaked to remove the lines which will change the fabric a little, the holes will tighten a little and the stitches will relax and plump up a little so the coverage will be better.
Thanks for showing us your test stitches. If I was going to put it on my scroll frame I think I'd go with the easy guide because stretched out like that the stiffness won't matter. If I was doing it in hand or hoop, i might go with a softer one. Whatever you choose, it's going to be gorgeous!
I use 20Ct easy grid Aida for my HAEDs and it definitely softens up with use. The grids do get a little lighter and harder to see, but since I mostly do parking, that's been okay for me. I do 2X1 for full cross and 4X1 for half cross. I really like stitching with it.
I would personally go with the white, stitches looked the best on it. I’ve always used 14 count. I want to try 16 or 20 count but I’m afraid I’ll mess up. 🤦♀️ TYFS the differences. 🥰

Dumb question why use a colored fabric when it is full coverage? Maybe for a border?
Not a dumb question .Yes, one could do a border, and if not, it's aesthetically pleasing.
