A few of my friends have healthissues and those things can be difficult to manage and travelling is out of the picture. Very good to go travelling and do things while you can .

Life is short.” Hers wasn’t that short at 92, but not everyone is that blessed. She loved to travel to Europe with friends so she did, many times, She loved cruises and went on 7! She wasn’t afraid to LIVE it up and didn’t want to “leave this beautiful earth” in her words.

Looks good enough to eat. I can’t imagine how some people don’t have regrets. I’ve always wondered if I should’ve gone left instead of right. But at this stage, I am glad I where I’m at. I have always wanted to an art class and today I signed up. I never felt I was good enough or had enough talent compared to my two sisters. Even though I have a 4 year degree in Interior Design.But not this year I’m doing it. And surprisingly my drawings aren’t that bad. Just a little out of practice.
I have put off pursuing my dreams because I was always taking care of someone else. I made attempts to get back into my art or beading when I was caring for my mother, but something would change with her and I put it aside because there just wasn't time for me. She's been gone two years now and I'm getting my bearings again. I only have myself to take care of and it's about time. I am attending a retreat in February and agreed to teach a craft while I'm there. It's something I wish I could have done more of at the assisted living place where I worked briefly. I did help my niece teach jewelrymaking at a retreat locally back in May so maybe there's a possibility I could make this more of a regular thing. I never really thought much of teaching arts and/or crafts, but I do it all the time at church with the Bible School kids. I have also taught other teachers when they want to know how I did a certain technique. I just like sharing creative ideas. I learn from my students as much as they learn from me. We all have something we can share with the world and there is always more to learn.

You know I love lasagna. For a change you can switch the meat for spinach: 2 bunches fresh fine chopped mixed with the ricotta cheese & an egg spread & layered with the cheese, noodles & sauce.
Exactly, I was out of work for 7 years being a caregiver to Mom. I kept up to date with my particular work skills via accreditation, webinars, etc. I've applied for 4 jobs without any job offers. I've listened to your past programs (which set off a light bulb moment) and I may have to change my direction, esp in this late date in my life. I got engrossed in watching you layer the lasagne, that at the end, I all of sudden, "Where's my spoon?" I wanted to scrape out the remaining meat onto the casserole,,,,,, 😋

Brought back such nice memories of her. For her meatballs she also added hot water to two slices of bread, back then it was Wonder bread. For the sauce she fried fresh garlic and onions in olive oil in the bottom of the pot. Haven’t made lasagna in a long time, but maybe I will I make it for New Year’s Day. I enjoyed your making Lasagna! Sourdough bread is a big thing now! I have loved it for years though! People are making it alot now. Lasagna looked good when you baked it!! I use to think I had no regrets, that has changed for me. I have health problems, and financial, so am limited on being able to make any big trips, but you know what, I may be able to do small trips, even if its an hour away or maybe 2, and make the best out of it! I also have a dog, I did not want another pet after I lost one pet, and this one was a surprise. Of course I have grown to love my pet, my advice to anyone who is thinking of giving an elder or anyone a pet, always ask first. Pets are to be cared for as you would a person. It is not always feasible for someone to afford it. Just being honest. Hope to see you in live chat!
Go be happy! Make memories and share with us. I regret not going to Europe for a month long hiking trip after my husband had passed away. I had to have back surgery and didn't want to go alone, so I never did go. That's okay. It wasn't meant to be at the time. I'm working on my book again. I've been trying to write this book for years. I've started it many times. I now live in the mountains with a beautiful view and feel at peace with my life. I had many hard times growing up. However, I've survived and just wanted to encourage others how to stay balanced and have faith that you can come out of a bad childhood and be happy. My adult life was beautiful and peaceful after getting out on my own at 16 years old. A person is able to come from a hard life and still stay humble, respectful, and forgive. Life is short. Memories can't be made if we just sit around and wish we would have done this or that. I enjoy cooking and baking. My last job was being a chef at a five-star B&B. I did that for eight years, and it was my favorite job. Everyone has their own way of making food. I find Italian food enjoyable to make. I also know Italians are very prideful of how they keep with their traditional way of cooking. I don't pay attention to people who aren't willing to learn. American Italian dishes are delicious as well. Your recipe is very close to mine. You be you and don't change. You have a beautiful soul! God bless you 🙏
Dear Allison, I am watching your channel for a while and I totally agree with your thoughts about the waiting game. I admire your drive, courage for your dream adventure! Go for it, it is your life, your dream! If I may can I make a few suggestions? I recently retired and moved back to Canada after living and working in UK. While there I traveled, I worked very hard by planning my mortgage, debt free retirement. I have no regrets, even my life wasn’t “a bed of roses. I recently started my own UA-cam channel. Knowing your situation whatever you do, don’t give up your place. At this age we need a roof over our heads and financial stability. I took 6 months to make a smooth transition by moving from one country to another. After 6 months I went back to London and gave up my rental accommodation. Spending 6 weeks back in UK wrapping my loose ends once again I was sure about my decision where I want to spend my retirement. In Canada I own a place. I felt great about my decision. By all means I am not trying to discourage you with your dream. iIf only you could keep your place, go and travel to all those countries, but have a base. Travelling and experiencing other parts of the world you will find what you are looking for. I had the best 15 years in UK with UPs and Downs but I was looking forward to come HOME! I totally agree. I did a lot of traveling with a friend in Europe, Mexico, the Caribbean and Costa Rica and then she died from a brain tumor. That, really made me want to keep getting out there and live life to the fullest. I'm a golf nerd, love to watch it, so in my late 60's I flew to England, stayed in a campground in a tent set up by the golf association so I could afford to watch the OPEN golf championship tournament. Now, since my mom has passed I "van life", which I love! Age is just a number, if you feel good, go out and do whatever it is you love.
There is always something I am not getting done, and that holds me back from the next thing I want and the one after that. I do know that something is me. Good content. And I would really like some lasagna now.

I'm so glad to hear you mention you have regrets because we all do. It's impossible, I feel, to traverse life with all the variables we inevitably must encounter along the way which are beyond our control (and sometimes seriously limit our options how to respond to them ) to avoid lamenting the road not taken. Every stage of life brings unique circumstances with their own set of dynamics to which we must adjust. In the absence of a crystal ball to guide us, mistakes will undoubtedly be made and that's totally OK too. The goal is to minimize regrets, not attempt to avoid them entirely. That's unrealistic.

I made lasagna for Christmas too! My Italian grandmother and family were from Northern Italy, so my recipe is much different than yours. I’m sure both were delicious, though. I appreciate your encouragement to not wait to do things. For so long I’ve been the support for others that I’ve lost sight of what I want, and feel stuck in a rut. My life isn’t bad, it’s just not fulfilling.
This lasagna looks great. I will try it some day. I have italian ancestors myself: My last name is Angelo! But that was in the 17th century when an italian family settled in Denmark. Nevertheless, I love italian food, language and culture, as well as french. My thing about italian cooking is mostly pastas with seefood, especially pasta alla puttanesca. The main ingredients in italian cooking are quality, time and care. So the best anchovies, sardines, black greek olives, olive oil etc that you can get if making a puttanesca. I think this is also important, getting older: Enjoy, take your time to cook.
I would love to run a writers retreat in a beautiful setting. I’ve been slowly moving towards it for about 20 years! Now I’m finally in a position to do it (in terms of qualifications, profile, credibility and money) so I want to start planning it.

This is critical for those that are just holding onto savings to hand down to ungrateful children and grandchildren. Live *your* time - even just leave and go do your thing for a month or whatever. Of course leave important word with policing officials in case family prompts a search for missing mom or dad, haha. Even let a lawyer know and prepare document of sorts that assures family that you are not being scammed or brain washed haha.
What screwed me over was the pandemic restrictions...I was leaving for Europe in April 2020 and the borders got shut down in March. It was a monumental shock! Then, by the time things got less restrictive, I developed a mobility problem, so.... I am thrilled that you are going to France. My only disappointment is that you delayed your departure, as I am eager to watch your videos abroad! By the way, did you have any success selling items? I ask because I too want to do so.

Hi Allison, I enjoyed watching this at 3am this morning. Using wet bread is a great idea for the meat balls. The lasagna looks so delicious. What a wonderful time you will have sharing this with your friends. I totally agree with you regarding doing what you can do now. We are at an age where we have to do this because you never know what is around the corner.
A panade is also made with milk. I've seen cooks use fine or panko bread crumbs, stuffing mix bread cubes, saltine or oyster crackers. Lots of options besides fresh bread. Spur of the moment cooking sometimes needs creative substitutions from the pantry or fridge.
Sometimes, we make our own obstacles. I struggle to work on doing a Swedish Death Clean so as not to leave pile of stuff for my minimalist daughter who only wants one of my bone china teacups. Progress is slow, so I reward myself when I accomplish a milestone, such as parting with several boxes at a time. I love lasagne, but it has to be vegetarian, they serve a wonderful one on the San Juan Cruise boats on Whale Watching trips around the San Juan Islands off the coast of Washington, along with salad, brownies and other goodies.
I bow to your infinite wisdom, especially on the most important truth of all: "You can never have enough Ricotta cheese!" Truer words have never been spoken-or spread on lasagna. Your lasagna looks delicious! Hope your Christmas was pleasant.

But when you get to France you can make a Lasagna using real fresh ingredients . I had a 30 years head start in France but enjoying it. I love lasagna ❤️. I made it a lot in my twenties. It’s one of those “labor of love” meals. I was at Olive Garden the other day and ordered their lasagna. I’m telling you, it tasted like Stouffers lasagna in the grocery frozen food dept. 😂.

No regrets. Plenty of mistakes and hard times but it all made me. But at 67 I have lots left that I want to do. Like you, France is in my future. I am retiring at 70, and I am in France as much as possible. Hope the lasagna turned out great!

That become from already 2023, as I had to postone several decisions and works, because of healf (myself and a close friend) and also some situation that did not depende only on me - I had to want. So, afternoon the end of this month, I shall do diferently, mameluco traveling to UK and France. I should be more “available” for myself. I hope to meet you in the places you are supposed to go, or you can come o Lisbon or Madeira Island. Depending on your dates it would be possible you to stay at my home in Lisbon or Madeira. Hi Allison. I'm sure that the Lasagna is tasty. I'm 65 years old and I live in a condominium in Denver, Colorado. My regret in life is eating any animals. I have been a vegan for several years. The reason why I'm a vegan is because I hate the fact that many animals are killed for human animals to eat them. You may not believe this but human beings are also referred to as animals. Have you put on weight? Kind of looks like it. You didn't say how you managed to keep the lasagne sheets from sticking together. Lots of people have that issue. Anyway, you don't have to put beef in your lasagne. Not everything has to have beef in it. You can make a really good lasagne with red pesto sauce, ricotta, mozzarella, quorn mince (fake beef), and sliced courgette, with lots of seasonings added in. If you don't want your lasagne to stick together when boiling, just make a few sheets at a time, put them in an oiled tray to the side, and make more until you have enough (one box is enough). Very Garfield of you lol.

I regret not going to Europe for a month long hiking trip after my husband had passed away. I had to have back surgery and didn't want to go alone, so I never did go. That's okay. It wasn't meant to be at the time.
I'm working on my book again. I've been trying to write this book for years. I've started it many times. I now live in the mountains with a beautiful view and feel at peace with my life. I had many hard times growing up. However, I've survived and just wanted to encourage others how to stay balanced and have faith that you can come out of a bad childhood and be happy.
My adult life was beautiful and peaceful after getting out on my own at 16 years old. A person is able to come from a hard life and still stay humble, respectful, and forgive.
Life is short. Memories can't be made if we just sit around and wish we would have done this or that.
I enjoy cooking and baking. My last job was being a chef at a five-star B&B. I did that for eight years, and it was my favorite job.
Everyone has their own way of making food. I find Italian food enjoyable to make. I also know Italians are very prideful of how they keep with their traditional way of cooking. I don't pay attention to people who aren't willing to learn. American Italian dishes are delicious as well. Your recipe is very close to mine.
You be you and don't change.

I am watching your channel for a while and I totally agree with your thoughts about the waiting game.
I admire your drive, courage for your dream adventure! Go for it, it is your life, your dream! If I may can I make a few suggestions?
I recently retired and moved back to Canada after living and working in UK.
While there I traveled, I worked very hard by planning my mortgage, debt free retirement. I have no regrets, even my life wasn’t “a bed of roses. I recently started my own UA-cam channel.
Knowing your situation whatever you do, don’t give up your place. At this age we need a roof over our heads and financial stability. I took 6 months to make a smooth transition by moving from one country to another. After 6 months I went back to London and gave up my rental accommodation. Spending 6 weeks back in UK wrapping my loose ends once again I was sure about my decision where I want to spend my retirement. In Canada I own a place. I felt great about my decision.
By all means I am not trying to discourage you with your dream. iIf only you could keep your place, go and travel to all those countries, but have a base. Travelling and experiencing other parts of the world you will find what you are looking for. I had the best 15 years in UK with UPs and Downs but I was looking forward to come HOME!

I totally agree. I did a lot of traveling with a friend in Europe, Mexico, the Caribbean and Costa Rica and then she died from a brain tumor. That, really made me want to keep getting out there and live life to the fullest. I'm a golf nerd, love to watch it, so in my late 60's I flew to England, stayed in a campground in a tent set up by the golf association so I could afford to watch the OPEN golf championship tournament. Now, since my mom has passed I "van life", which I love! Age is just a number, if you feel good, go out and do whatever it is you love.

I'm so glad to hear you mention you have regrets because we all do. It's impossible, I feel, to traverse life with all the variables we inevitably must encounter along the way which are beyond our control (and sometimes seriously limit our options how to respond to them ) to avoid lamenting the road not taken. Every stage of life brings unique circumstances with their own set of dynamics to which we must adjust. In the absence of a crystal ball to guide us, mistakes will undoubtedly be made and that's totally OK too. The goal is to minimize regrets, not attempt to avoid them entirely. That's unrealistic.

I made lasagna for Christmas too! My Italian grandmother and family were from Northern Italy, so my recipe is much different than yours. I’m sure both were delicious, though. I appreciate your encouragement to not wait to do things. For so long I’ve been the support for others that I’ve lost sight of what I want, and feel stuck in a rut. My life isn’t bad, it’s just not fulfilling.

This lasagna looks great. I will try it some day. I have italian ancestors myself: My last name is Angelo! But that was in the 17th century when an italian family settled in Denmark. Nevertheless, I love italian food, language and culture, as well as french.
My thing about italian cooking is mostly pastas with seefood, especially pasta alla puttanesca. The main ingredients in italian cooking are quality, time and care. So the best anchovies, sardines, black greek olives, olive oil etc that you can get if making a puttanesca.
I think this is also important, getting older: Enjoy, take your time to cook.

Wishing you so much for the new year and for your followers that may be inspired to get outta situations, hum drum lives or circumstances, and have resources-cash to do something for themselves. This is critical for those that are just holding onto savings to hand down to ungrateful children and grandchildren. Live *your* time - even just leave and go do your thing for a month or whatever. Of course leave important word with policing officials in case family prompts a search for missing mom or dad, haha. Even let a lawyer know and prepare document of sorts that assures family that you are not being scammed or brain washed haha.

What screwed me over was the pandemic restrictions...I was leaving for Europe in April 2020 and the borders got shut down in March. It was a monumental shock! Then, by the time things got less restrictive, I developed a mobility problem, so.... I am thrilled that you are going to France. My only disappointment is that you delayed your departure, as I am eager to watch your videos abroad! By the way, did you have any success selling items? I ask because I too want to do so.

Hi Allison, I enjoyed watching this at 3am this morning. Using wet bread is a great idea for the meat balls. The lasagna looks so delicious. What a wonderful time you will have sharing this with your friends. I totally agree with you regarding doing what you can do now. We are at an age where we have to do this because you never know what is around the corner.
A panade is also made with milk. I've seen cooks use fine or panko bread crumbs, stuffing mix bread cubes, saltine or oyster crackers. Lots of options besides fresh bread. Spur of the moment cooking sometimes needs creative substitutions from the pantry or fridge.

Sometimes, we make our own obstacles. I struggle to work on doing a Swedish Death Clean so as not to leave pile of stuff for my minimalist daughter who only wants one of my bone china teacups. Progress is slow, so I reward myself when I accomplish a milestone, such as parting with several boxes at a time. I love lasagne, but it has to be vegetarian, they serve a wonderful one on the San Juan Cruise boats on Whale Watching trips around the San Juan Islands off the coast of Washington, along with salad, brownies and other goodies.

Happy Christmas to you, The lasagna was missing the sliced pantoates on the base and carrots thats how its made in France. But when you get to France you can make a Lasagna using real fresh ingredients . I had a 30 years head start in France but enjoying it. The UK and France will blow your mind and you will say to yourself why didnt I go at 60, I am sure many ppl are thinking this,

Hello, Allison. That was a great video today. Your lasagna recipe looks amazing. I am not a skilled enough cook to make something that delicious. I would need to dine out for a meal like that. I also appreciate your advice for making things happen instead of just thinking about it. You are right. Tomorrow may never come if you wait too long. I don't think I will ever be traveling as far and wide as someone like yourself. But I do want to visit a few places in the U.S. and points north. Not sure if l will have the opportunity. I love lasagna ❤️. I made it a lot in my twenties. It’s one of those “labor of love” meals. I was at Olive Garden the other day and ordered their lasagna. I’m telling you, it tasted like Stouffers lasagna in the grocery frozen food dept. 😂.

No regrets. Plenty of mistakes and hard times but it all made me. But at 67 I have lots left that I want to do. Like you, France is in my future. I am retiring at 70, and I am in France as much as possible. Hope the lasagna turned out great!

Can't you get Italian citizenship when having a Sicilian Grandmother? Then it's much easier to be in France when you have EU citizenship or passport.

That become from already 2023, as I had to postone several decisions and works, because of healf (myself and a close friend) and also some situation that did not depende only on me - I had to want.
So, afternoon the end of this month, I shall do diferently, mameluco traveling to UK and France.
I should be more “available” for myself.
I hope to meet you in the places you are supposed to go, or you can come o Lisbon or Madeira Island. Depending on your dates it would be possible you to stay at my home in Lisbon or Madeira. I usual have family or friends with me, but May be we can arranje something.
After you are in France/Europe we shall see.

Recipes do in fact change, to varying degrees, when they are taken to another region, travel over a border or cross an ocean. This has occurred throughout history.

Hi Allison. I'm sure that the Lasagna is tasty. I'm 65 years old and I live in a condominium in Denver, Colorado. My regret in life is eating any animals. I have been a vegan for several years. The reason why I'm a vegan is because I hate the fact that many animals are killed for human animals to eat them. You may not believe this but human beings are also referred to as animals. I'm an animal. You're an animal. Any person/human being who reads this comment is an animal. I'm not meaning to offend or insult anyone. Have you put on weight? Kind of looks like it. You didn't say how you managed to keep the lasagne sheets from sticking together. Lots of people have that issue. Anyway, you don't have to put beef in your lasagne. Not everything has to have beef in it. You can make a really good lasagne with red pesto sauce, ricotta, mozzarella, quorn mince (fake beef), and sliced courgette, with lots of seasonings added in. If you don't want your lasagne to stick together when boiling, just make a few sheets at a time, put them in an oiled tray to the side, and make more until you have enough (one box is enough). Very Garfield of you lol.
Take it all to the Lord, confess your sins and repent, and the heavy burdens should be off your shoulders thanks to God and his son Jesus
