Dear Atunaisa, If there is too much moisture in the peas while frying, it may pop and also the oil will splatter. Oil and moisture don't go well together. I am not an expert. It is only a suggestion, add half teaspoon of salt in the oil to stop it from popping and splattering. You can also use a splatter guard. Regards Anita.

Dear English, Yes you can omit it. Baking powder makes the peas soft and crispy and also retains its green colour. You can also add 1/4 teaspoon of baking soda while soaking the peas to absorb excess gas as well. Regards Anita.

Defrost the peas first in some water, drain it and let it dry in a tea towel for 15 minutes before frying or you can roast it in the oven or air fryer. To make it spicy, add chilli powder and some crushed garlic while still hot. To roast it in the oven, add 1 tbsp of oil to 2 cups of peas, 1 tsp of salt. 1 tsp of chilli powder and 1/2 tsp of garlic powder and roast it at 180 degrees for 15 - 20 minutes shaking the pan to stop it from burning or until crispy.
