  • International dish #8 is a Vietnamese dish called PHO (pronounced "fuh").
    Here is the recipe
    Ingredients
    * 4 quarts beef stock
    * 1 large onion, sliced into rings
    * 6 slices fresh ginger root
    * 5 star anise or 2.5 tsp of anise seed
    * 1 cinnamon stick
    * 1 teaspoon whole black peppercorn
    * 1 pound sirloin tip, cut into thin slices
    * 1/2 pound bean sprouts
    * 1 cup fresh basil leaves
    * 1 cup fresh mint leaves
    * 1 cup loosely packed cilantro leaves
    * 3 fresh jalapeno peppers, sliced into rings
    * 2 limes, cut into wedges
    * 2 (8 ounce) packages dried rice noodles
    * 1/2 tablespoon hoisin sauce
    * 1 dash hot pepper sauce
    Directions
    1. In a large soup pot, combine broth, onion, star anise, ginger, cinnamon, and peppercorns. Bring to a boil, reduce heat, and cover. Simmer for 1 hour.
    2. Arrange bean sprouts, mint, basil, and cilantro on a platter with chilies and lime.
    3. Soak the noodles in hot water to cover for 15 minutes or until soft. Drain. Place equal portions of noodles into 6 large soup bowls, and place raw beef on top. Ladle hot broth over noodles and beef. Pass platter with garnishes and sauces.

    The recipe differs from region to region in Vietnam. This is...somewhat close, but no I wouldn't call this Phở.

    quick tip - to slice the meat super thin freeze it than you shave really thin slices from the frozen block of meat, that way you can get it so thin it's almost see through when done that way

    I just noticed the sound effect he uses for chewing in the intro is the Minecraft digging sound. Pretty sure it's the sound that is made when you dig on gravel.

    Don't use beef stock use cow bones with water so your broth is clear and u r using too much hoison and u don't really need spices u can put chilli paste in but you can use the spices if you want to

    I tried Pho for the first time when my son took me to a Vietnamese restaurant on Yonge Street in Toronto and it was absolutely FANTASTIC! A massive bowl was less than $7 and the flavour is so good that I can't even describe it. Considering I'm afraid to try new things, this says a lot about Pho. If you're scared to try to cook it, go and have some at a restaurant. The Vietnamese know what they're doing!

    Thank you for showcasing a Vietnamese dish. However, I would like to know where did you get the recipe from? Growing up in a Vietnamese household, we never used store-bought beef broth. We would make the broth from scratch using beef bones. The beef slices definitely needs to be much thinner. I've never had a beef broth that dark for pho in my life.

    The beef needs to be more thinner
    The broth needs to be clear so don't use stock.
    Use bones for the flavour
    And put the beef on top of ur pho and pour the broth ontop of it.

    Some of you need to relax. He doesn't claim to make authentic cuisine, he's a home cook that tries to make things that are easily accessible to the average person. I'm Italian-Spanish & Mexican, and I don't get on my high horse and scold him for not doing things a certain way, because I understand the purpose of his show. Just relax. If you don't enjoy the videos, don't watch them; all the criticism and negativity is unnecessary.

      Honestly yeah, the meat is not thin, but at least it's not as thick as rachel's. But still, something feels so wrong

    @TheJethrotull32 yoru absolutely right that the dutch oven would have held heat better but as you saw the meat was cooked well. I did have some thicker than others. I chose the thinner ones. I also definitely will have the butcher shave the meat for me next time. It really was awesome. Thanks for the input.

    Hey Jack, you can season the beef with some crushed black pepper if you like!
    You can add green onions for more flavor too, boil water in a separate pot and give the noodles about a 30 second dip, it softens them up easier and helps you prepare noodles for the family :)
    They also have meatballs served with the soup, look for the key words "bo vien"
    I personally mix the hoison sauce, sriracha, and lime in a small plate to dip my meat, you should try it!

    You can use the side of the knife to flatten the meat a little more. That would make your slices SUPER thin.

    There are so many recipe variations. My mother makes this by boiling an entire chuck of beef along with all the spices and onion. That chuck of beef is then thinly sliced and added to the pho also. Something my family does is add hoison sauce, fish sauce, and lime juice to the broth to our liking at the end. It's a wonderful trifecta of flavor.

    Another tip. If you wanna cut the meat really thin. Keep it in the freezer for about one hour.
    That way it is really firm and stiff, and easy to cut. And when your done cutting, it will already be completely soft again.

    There are many seasoning you can add to it, you should bake the seasoning then boil it because it helps alot

    When I make pho , I take another pot, get it to boiling temp and then cook the meat/ rice noodles in it. This will make it smooth and better to eat

    Hey Jack! I'm sure you've probably already read this somewhere in the comment but it's better if you boil plain water and then dip in the pho noodle and throw in the broth right afterward. That way when you eat the noodle it's soft and cooked. I've never seen anyone simply put the noodle in warm water and eat it like that before, but hey there's a first for everything and if it taste good than it taste good. You should also look for Banh Pho Tuoi (fresh pho noodles) it's usually in a clear bag.

    Instead of tearing up the basil, put it on your palm and slap is a couple of times firmly with your other hand, this bruises the leaf and brings the basil flavour right out of the it =)

    Jack - I suggest adding beef balls as an add on. It tastes great and you just add it to the soup. Also, you put the bean sprouts at the bottom of the dish before adding the noodles in and you put the meat at the top so that the soup cooks it when it's poured in!

    i was told the number was from where the owners came from within vietnam and you can tell if the pho will be good because certain places in vietnam make pho better than other places.

    That was a horroble Pho!!
    1. dont use beef stock! use beef bone!!
    2.you can not slice meet!! have to slice it way thinner than that!
    3. too much hoison sauce and ur meat is still raw!! lol
    4.you have to cook ur rice noodle allway, not in warm water!!
    5.next time, put your meat on top of noodle!!
    after all.... good try!! :)

    It's difficult with an american accent to achieve the exact pronunciation of the word but he says it better than most americans... Many americans say "foh" instead of "fuh" due to ignorance.

    Thanks! You are an intrepid chef and I appreciate the time and care you spent making the videos. Cooking is fun, and while it can always be done better, it's most important to just jump in and make something -- it almost always turns out.
    My favorite suggestions on the comments board was using a long thinsharp knife to cut meat thinly and to add roasted beef bones. Actually -- vegie and meat scraps (the carcass from rotisserie chicken is perfect) will make a better broth then just boxed.

    I don't think you should substitute anise seed for star anise. Anise seed has a licorice taste. Star anise has a wonderful deep taste. You can find it in kist major grocery stores.

    @FrailShiver the restaurants usually make it with their own broth which was made using only the bones. Thats why they are much lighter in color.

    I'm not really one to judge or say that it's made wrong, but it's definitely made differently from what my dad makes. Okay, so the items going into the bag have been seared so the flavour has burst open. No cinnamon sticks. Beef bones have been boiled over night. Add less then 1/8th of a teaspoon of msg, granted, for a giant pot. Use fish sauce if flavour isn't enough. Cook the noodles before putting it on the meat and cut the meat thinner. Trust me, it'll taste so much better.

    The first way you pronounced anise is how we Germans pronounce it.
    Nice job on the Pho. And i got a little tip. I use a tea infuser instead of a bouquet. Its reusable, and they come for like 4-5 bucks.
