You do not, no matter from which part of India you are, DO NOT mention Chhatrapati Shivaji Maharaj with a singlular name. He not only fought for Maratha but entire India. He laid the foundation for Peshwas which enabled them to expand the Maratha empire and capture the entire Indian subcontinent including Delhi itself.
Unfortunately CBSE, ICSE and some other state boards do not teach this history thoroughly, which is tragic in a sense.

"Mothi sev ki sabji" is basically a spicy gravy(rassa) with thick orange colour spicy sev in it. Maharashtrians loveeeeeee spice in their food. A must-try.
And, not necessary Maharashtrians are always non-vegetarian..
Also, there's a sweet balance between being attached to one's culture at the same time; with a tadka of modern lifestyle.

Jishant ji main aapko batana chahta hoon ki humare yahan sirf 61% Maharashtrian log hi non vegetarian hain but yes in some regions of Maharashtra people do it more spicy food as well & most of it is non-veg food. Most of us don't love to make show off our things more. We're simple living with sensible high level of thinking.
