Unfortunately, I lost mom in 2011 and to this day I still pick the phone up to call her. Just as you did with your so sweet Mamaw. They are the BEST treasure! I wanted to call her to understand just how she made it as we are having a family reunion coming up June 1st, 2024 and I want them to experience and the fond memories of the taste of the way we grew up with. Another tasty way to make the meringue is add brown sugar instead of regular sugar. Makes it taste like caramelized bananas. Yummy! Whipped topping I like on banana pudding too.

My mom made great banana pudding. She served it at room temperature initially and then refrigerated the leftovers. I like it cold but love it at room temperature.
I made this recipe for "banana pudding sans meringue" for a bunch of banana pudding "elitist snobs" and it resulted in a wail of hearty, almost tearful, approval from everyone at the table!! I personally prefer an "equal" ratio of bananas and vanilla wafers. I am now a full-fledged member of Nicole's large fan club!
I don't care for meringue or whipped topping. My mom used to build her banana pudding into the prettiest glass bowl she had, usually a clear carnival glass footed bowl or a crystal footed fruit compote bowl. This was for holiday dinners or more formal family gatherings. She made it just like you did, but carefully added the wafers up the side with the pretty side facing out. Then at the top was pudding, then the most perfect cookies in the box. A layer of plastic wrap, then into the refrigerator for several hours or overnight. For casual family stuff (picnics) etc, just into a Tupperware bowl with a lid. And yes, the partially soft cookie is what makes the pudding.

I actually mash 1 and half to two bananas mashed and fully mixed into my custard or you can mix it into vanilla store pudding it gives pudding a great consistency..also turns it to banana pudding not vanilla pudding plus banamas and wafers..I sometimes just add the bananas after per bowl so it doesn't turn brown..
Th best ever “ pudding style dessert “ was found at the former Popwell’s Restaurant in Mississippi ( hwy 98 y’all lol ) was their crushed pineapple pudding with basic custard and nilla wafers- absolutely tongue slapping phenomenal! The one of very few things I miss about living in Mississippi ( I hate it there )
Banana pudding is a Must-have here in the south.. I’m actually not very picky about the topping, but I do prefer the “calf slobber” (meringue) 😋 P. S. My mother in law doesn’t like bananas, so she makes the exact same recipe but uses strawberries instead.. it’s good too, but banana is my favorite 🤩

In our area we love whipped topping. But I have never seen it with vanilla wafers. We just put banana chunks in the pudding in pretty dessert dishes and top with whipped cream. The creaminess is the key which I think the wafers would take away from that. But the custard recipe looks great!
I whisk cornflour into the sugar then whisk in the egg yolks. Bring the milk up to temp and slowing add the milk into the yolk mixture then back into the pot to finish cooking out the flour. Less chance of lumps.
Buy yourself one of those huge 8 cup Pyrex measuring cup/bowls. Mix all the custard ingredients (except vanilla and butter), cook in the microwave for 3 minutes, whisk well, finish in 30 sec. increments. Boom. Perfect pudding. You’re welcome.

The single thing I can expect is they make the vanilla wafers crunchy. Crunchy wafers is the deal breaker for me. I always appreciate the effort but it just kinda sucks. I never complain but my dissatisfaction is obvious when I don't take the leftovers home with me. This year I'm gonna do it. Show those girls who the boss is. I like this recipe and I think it is what I will try.
I love the standard meringue, but what I don't like about it is that it doesn't really survive overnight in the fridge. It seems to start sweating some ectoplasmic residue between the meringue and the pudding which still taste okay but looks horrible.

Try using banana custard, do that by using some banana extract in addition to vanilla extract. I haven't tried it yet, but I'm going to at some point
