I Love this video! I make Chicken Pot Pie filling and bag it up and freeze it. It can be served over rice, biscuits, pasta or mashed potatoes. And if you are (as I do) making lunches. Make your individual meal with rice and beans. Guacamole freezes really well!! And freeze some tiny containers of Salsa then add it with chips. Endless things you can do. And bag any remaining chicken for Chicken Salad. *One last note- Buy several when they get marked down, then shred and freeze them in 2 cup portions. I love the versatility with the delicious unbeatable flavor of Rotisserie Chicken. Game changer!
That is a total game changer! So is the idea of freezing guac! I never really thought about it! Great idea! Apparently you can go to costco first thing in the morning and if there are any rotisserie chickens from the day before, you can nab them at a deeply discounted rate.

Freezer meals really can be for everyone!
I would dice the chicken breast and shred the rest. Then you could use the diced in a variety of ways as well.

Im in the club but I just love watching your videos. I bought 2 huge whole chickens and did a video on roasting them with my 15 yr old daughter and we had the most fun so now I am going to show her how to use that chicken we roasted to make meals for the freezer. She learns best by watching so we are watching this video together. Luckily, I have a friend who enjoys demeating the bones so that part is already done and the bones along with 2 chopped onions and 2 lbs of mushrooms, various spices and freeze-dried herbs along with 6 quarts of now rich deep bone broth are in slow cooker to be canned.

The shredded chicken makes great chicken salad and the broth with chicken (I use the carcass for this) makes the best tasting chicken and dumplings. I have 2 rotisserie chickens in fridge and will be prepping meals tomorrow. Appreciate the video.

LOVE the Sriracha Rice!! Made 2 last week and had one for dinner on Wed. sooo Good. Also, I found some Sriracha at dallarama! Not the Rooster brand but looked the same with the green cap.

I have made the chicken enchiladas and they were delicious if I made them right away but when I froze my other pan no so much. The frozen one were soggy and that didn’t suit me. I will make them again but will freeze without the sauce on them and put the sauce on before I cook. The other chicken recipes will be made n the future when I have the room. Thank you! Oh Christie, I finally got my air fryer out and I love it. My son uses it all the time. Yeah!
hooray for air fryers! If you try them without the sauce, let me know how it goes. Our regular enchiladas don't seem to be too soggy, so I'm surprised these ones are but until you try, you never know!
I'm seriously thinking of joining your freezer meal plan club and am looking at the Amazon list of items - specifically the black plastic storage containers. What size did you use for the individual meals shown on this video? I'm wondering what size(s) to order prior to starting this way of cooking. Quite honestly - I'm sick of cooking every night and would love to have meals in the freezer ready to go. I'm a family of two - myself and my 80 yo Dad who is on a diabetic diet and needs smaller meals that he can take out of the freezer/refrigerator each day by himself while I'm at work. It's hard to prepare smaller meals and I find that I'm making the same casseroles, two at a time, freezing one and eating the other then relying on left-overs or sandwiches for lunches. Plus, I would like to have some pre-made breakfasts for my Dad as well. I've really enjoyed watching your videos these past two weeks since I discovered your channel and look forward to this new cooking adventure. Thanks!!
Ours are about 4 inches by 8 inches, if that helps. I hope to see you in the Club!
Another way to do it is to grab some chicken broth put it in a kettle, drop your chicken in, boil it till the meat falls off the bones.
Pick bones of meat when cool enough to handle
Then separate meat from broth by straining.
You still have your meat and double rich broth for recipes.😉
Chicken bones make the best broth.

I can’t find the white chicken enchiladas recipe in the membership recipes. Is it under a different name?
It's not in there yet. We send the recipes to our food photographer. She then makes the food and takes much better pictures than Sharla or I could manage and then we can put the up in the membership. After a while, they end up on the main website as well. I am 100% sure if this one is going in the club. I found it very rich and would like to tweak it more before it goes out to the world, but maybe Sharla likes it as is and plans to use it. We will have to talk about it! lol
So how would you guys do a breakfast burrito freezer meal with green Chile without making the tortillas soggy?
I find in general, freezing the burritos and thawing them makes them somewhat soggy. I like to cook mine in the oven or in the air fryer so they have a chance to crisp up again. Sometimes the benefit of having quick and easy meals on hand means you trade off on them being super crispy. It's a trade off we find worth it, but not everyone feels the same.
Oh no Sharla - don't dirty a dish! Just throw the burritos in the oven wrapped in the foil. I wrap mine in parchment and then together in a freezer bag. Then microwaving is easier

Question, When you are making Dairy free stuff, do you substitute things like olives or ? for flavor or? Just notice you do a lot of heavy dairy, which I like but have a dairy allergic person so was hoping to see some dairy free stuff now and then? anyway I keep looking for some dairy free stuff besides beef stew and spaghetti with meat sauce and chilli, or ways to make dairy stuff with some alternatives.
Are you in the Membership Club? There is a filter in there to find dairy-free meals. We don't do dairy-free replacement very often (ever!), such as almond milk or soy milk, however it is my understanding that they freeze well. Is that what you had in mind? Or just more meals that aren't dairy related at all?
@@FreezerMeals101 I will do alternatives, like coconut or almond milk on occasion if it doesn't mess with the taste, but often it just makes it so no one is happy with the meal, so I was kind of looking for some one pot things that either aren't dairy related OR I can ad to bowl or plate when serving. so I'm not having to make different meals for different people.

Wow you got meat off the wings, i generally put them into the broth pot and remove extra meat after its been boiling a bit. again wow!
Sometimes I do that too. These ones looked meaty so I decided to go for it!

You could but then they would lose some of their crispiness so you can if that won't bother you.

I think it is hilarious that you call aluminum foil, "tin" foil. I don't think tin has been used for many decades, at least not here in the US.

Yes, it's one of those ones that we use interchangeably here. It's definitely aluminum! lol
It's a Midwest thing. We say tin foil when we know it's aluminum foil. We also call soda pop

I’m in Iowa. We call it tin foil also. We also call soda, pop! But we are in our 60’s, so maybe that’s why too?Because I notice a lot of younger ones call it soda & aluminum foil. But we also say...breakfast, dinner & supper too, instead of breakfast, lunch & dinner.😁🤷🏼♀️
