Copycat Primanti Brothers Sandwich | Veal Cutlet Primanti's Sandwiches

  • Today I'm recreating the classic Primanti Brothers Sandwich at home! For the meat I'm using a tender veal cutlet, plus I have the BEST recipes for authentic tasting coleslaw and french fries for these epic sandwiches.

    Primanti’s Style Coleslaw
    (recipe adapted from goodfoodstories.com)
    1 small cabbage, cored and sliced very thin
    ½ c. plus 1 tsp. white sugar, divided
    1 c. distilled white vinegar
    ½ tsp. kosher salt
    1 tsp. poppy seeds
    1 tsp. Dijon mustard
    ½ c. vegetable oil
    Place the shredded cabbage into a large bowl and sprinkle ½ c. white sugar over top. Using your hands, massage the sugar into the cabbage for 2-3 minutes, squeezing out any excess liquid. Allow cabbage to sit another 15-20 minutes then drain excess water. Meanwhile in a medium saucepan, add the vinegar, 1 tsp. white sugar, ½ tsp. kosher salt, 1 tsp. poppy seeds, and 1 tsp. Dijon mustard. Whisk together and bring to a boil over medium heat. Whisk in the vegetable oil then reduce heat and simmer for 5 minutes, whisking occasionally. Remove the dressing from the heat and allow to cool. Once cooled, pour the dressing over the cabbage and toss to combine. Cover and refrigerate at least 2 hours before using or overnight.
    Air Fryer French Fries
    4 russet potatoes
    2 Tbsp. olive oil
    kosher salt
    Scrub the potatoes well. Slice them vertically into ¼ inch planks then cut each plank into fries. Air fry in batches. Place half of the fries in the air fryer basket. Drizzle with 1 Tbsp. olive oil and sprinkle with kosher salt. Toss to coat. Air fry at 380* for about 20 minutes, tossing occasionally as they cook. Remove to a plate and sprinkle with a little more kosher salt. Prepare the 2nd batch the same way.
    Veal Cutlets
    8 veal cutlets
    1 c. flour
    salt & pepper
    garlic powder
    2 Tbsp. olive oil
    8 slices provolone cheese
    In a shallow bowl, add the flour and season with a pinch for salt and pepper and ¼ tsp. garlic powder. Stir to combine. Dredge each cutlet on both sides in the flour shaking off the excess. Pour 2 Tbsp. olive oil into a nonstick skillet and preheat over medium heat. Transfer half of the cutlets to the skillet, cooking for about 1 minute per side or until golden brown and the internal temperature is at least 145*. Remove to a plate and prepare the second batch.
    If using cheese for your sandwiches, place a slice of provolone onto each cutlet as soon as you remove them from the pan so it warms up slightly.
    For the Sandwiches:
    Place two veal cutlets topped with provolone cheese onto a slice of thick cut Italian bread. Top with a generous handful of French fries, coleslaw, and a couple of tomato slices. Finish with another slice of Italian bread. ENJOY!

    Yay! Can't wait to try the coleslaw recipe. Have tried 5 or 6 copycat Primanti's slaw recipes that were good but not close to the taste. Happy to hear it tasted authentic. Thank you, thank you, thank you!

      I think you’ll be very happy with this one! My nearest Primanti’s is about 30 minutes away. My husband and I took a bite, looked at each other and said, oh we can make these at home now!

    WoW...that is one huge sandwich! I have never heard of a Primanti sandwich...I can understand why you didn't do a taste test on camera...LOL how do you get it into your mouth for a bite? Do you use a knife and fork? I have heard of the British putting fries on their sandwiches but here in Canada I have never heard of it nor do I understand why...so many carbs! I love that you shared the coleslaw recipe dressing, looks so good. I love your video's even this one, still chuckling on the size of that sandwich...LOL Thanks for sharing!

      Haha I actually filmed myself taking a bite, and it did not go well! They are HUGE sandwiches. Sometimes hard to get everything in one bite. All the flavors/textures work great together though!

    This looks fabulous: can't imagine anyone in the family not loving it. Making it a home will keep the bread from getting soggy underneath which has been my experience with take-out.

    I'm finding out when I bought extra groceries to stock up on. They are now outdated. Is this OK because my children are noticing the dates and are a little leery 💜

    With all due respect, and I'll admit this sandwich looks amazing, does Veal Discover Delicious raise and harvest veal humanely? I ask because I researched how baby calves are treated and it's a slippery slope. I have eaten veal in the past and yes, it's delicious, however, I have always understood that veal is a big NO NO due to how the animals are treated. It's been argued that there's no humane way to raise and harvest veal. That being said, I'm a big milk drinker and they say that as long as they're dairy farms, there's going to be veal production. I feel that these discussions need to happen so we can all better understand where the food we're eating comes from. I also feel as long we all make responsible choices in what we eat, etc, everything will be better.

      Hi John! I never ate veal growing up-definitely a stigma surrounding it. However! I am very grateful to be working with Veal Discover Delicious because I have learned so much about what is happening in the veal industry TODAY. Since the mid 2000s, Millions of dollars were put into updating every single veal production facility in the United States. I had the opportunity to tour two farms in different states and the facilities were incredibly clean and spacious.
