This quick and tasty strawberry compote recipe is perfect for cakes! I've revised it and touched it up to make an even better recipe! Come follow along so that you can create amazing puree, and fillings for your cakes, cupcakes, pastries, and any other deserts! You will not be disappointed.
1 cup puréed or cut up strawberries
2-3 tablespoons sugar
Splash of lemon (optional)
1 Tablespoon cornstarch
1 Tablespoon water
Always use cold water for a cornstarch slurry guys. Cooking 101.
Any particular reason? I'm somewhat new to baking and haven't used corn starch in any home cooking or baking
It can get clumpy and not mix. I have super fine cornstarch (Bob's mills) and I can mix it into cold and warm I noticed.
1 cup strawberries
2-3 tablespoons of sugar
squeeze of lemon
heat on medium or medium high, stirring often
as soon as it starts to bubble reduce heat to low, heat for 5-7 minutes until it starts to thicken
tablespoon of cornstarch
tablespoon of water
mix slurry into strawberries to thicken
chill in fridge

You can use fruit pectin as a substitute for the corn starch as a thickening agent

Earlier today I was quickly googling how to make this for some muffins I wanted to bake and the instructions did not include that tsp of water to dissolve the cornstarch. My jam was ruined! 😢 I wish I had watched your channel instead!! I will try again tomorrow 😊
I made it and when I put the cornstarch and water in it. The cornstarch was in chunks, it mix it but for me and tastes good but the chunks just messes it up. I won’t do this again. Maybe I would use a liquid cornstarch syrup.
Looks food! I need to find a filling I can use on a wedding cake. Would this work on top of icing in-between layers of almond cake?

But you didn’t add the cornstarch

No, cornstarch is needed to thicken.
Regular wheat flour takes too long to lose its raw taste, even after it's started to thicken. By the time it tastes better, your strawberries, or any other fruit, will have lost its amazing flavor and the flour will have overpowered even the light texture of your filling.
Just no. No flour for thickening fruit filings! Try arrowroot if you don't want, or can't, use corn starch.
