2 cups lentils
1 1/2 tablespoon coconut oil
1 medium onions
4 cloves garlic
1/2 teaspoon black pepper
1 teaspoon cumin (geera) seeds
3/4 teaspoon salt (adjust)
1 1/2 tablespoon Caribbean Green Seasoning
1 1/2 tablespoon curry powder
1 package of coconut milk powder
5 cups water
1 tomato
4-6 slices ginger
1 wiri wiri pepper (optional)
2 scallions

Looks delicious. I have one question: I have coconut milk powder, but not in packets. What measure would equal the packets you mention? Thank you.
I love the coconut milk powder...I'd start by using 1/4 cup (4 tablespoons) and see how you like it half way through. You can always add more to taste.
I love lentils there's not enough ways you can cook them but this looks great. What's the best thing to serve this with? I would, personally, sit and eat that pot of lentils on its own. Any suggestions 🤔
i had this with a side of rice.. and stewed chicken (leftovers). But I agree, perfect on it's own.
