The right to forage exists in Sweden as well, we call it "Allemansrätten". I used to pick a lot of berries and mushrooms as a kid, it's so common here that it's hard to think of it as special. 😁
Having a pile of uncleaned chantarelles and then a table filled with the polished ones spread out to dry a bit? Yes that's summer alright. Or picking enough blueberries to make a pie.... but you just want to eat them as they are.

I've been using dried shiitakes for this. Re-hyrdate and use the resulting shiitake liquid instead of water. Much stronger mushroom flavour.

Tip : use dark soy for a great colour. I just made this it turned out great ! Just what we needed after gochujang fried chicken for lunch that blew our mouths off, this was a welcome comfort food.

Mushroom foraging sounds like quite the adventure and so does eating fugu sashimi at the local community college culinary arts training center. You know, the one where the directions to the nearest hospital are printed on the back of the menu. "Seconds, please!" Lol, just having a little fun.

Daniel, a hint with using stainless steel pans: heat the pan to pretty dang hot. Then and only then, add the oil. Only once the oil is hot, do you then add the food. You can certainly adjust the heat as needed but getting the pan hot before adding the oil, and the oil hot before adding the food, will give you great, non-stick results when using stainless steel. And I love your "powerwash with the onions" trick, by the way!

I love this channel. The atmosphere is wonderful and contagious-- the encouraging way you say "good" is so nice. The little references to food as like something else (graffiti in this video; in others you've said "constellations" etc.) makes me think about all the wonderful ways we can experience cooking. It makes me want to pay even more attention when I cook-- and I love to make food! It's a delight to watch the playful observational quality you have and the enjoyment you get out of the experience of creating dishes and eating them.

Because I live in Sweden I can go mushroom foraging- we have the same laws and I live close to a really old forest. Picking yellow chanterelles during late summer has become a tradition for me and my grandparents! If you get the chance to go to Finland and do that again, you really should! If someone tells you their mushroom spots, you are definitely appreciated by your colleagues. We don't easily give up our mushroom spots

Any Halal Substitute forMirin? Look out for HonteriMirin by Mizkan which contains no alcohol. Or you can substitute mirinwith water and sugar. The ratio of water and sugar should be 3 to 1. - google
The only things missing in my drawer are:
- gochujang sauce
- buttload of sesame seeds
- leeks
- coarse salt
- less salty soy sauce
urrgh those imported things are expensive.
Are there alternative for oyster sauce? Maybe sweet soya sauce? It is the same texture :)
Bahar Eylem some stores sell a mushroom vegetarian stir fry sauce which I’ve seen used as a frequent alternative to oyster sauce. There is a Lee Kum Kee variety Ike seen used by other youtubers.

Why didn't you cook the onions and mushrooms first. You really could have cooked them to perfection if you did it that way.
