Hi my dear, I'm your new subscriber, I'm from Switzerland, I have a question, could you tell me the amounts of lemon, balsamic and vinegar used? I would really appreciate it. Good Morning Soybenyree, I just noticed your e-mail before I slipped out for the day. Thank you for your kind comment, and yes apparently my very discriminating foodie-type son-in law can't get enough of them. Ok, as for the time to roast...yikes! that does depend on the liquid quantity retained by the tomatoes. I have both roasted and broiled batches, and I would say anywhere between 20 to 40min. and if they create excess (you decide what "excess" is) liquid in the process, just drain some of it off. Stephanie Hatfield..a month or more...IF and only IF you keep everything under oil...add oil and top it up if you have too...
What temp did you roast at?
I don't remember...likely 350 to 375F
