I keep it in a mason jar in the refrigerator to enjoy on crusty bread, cooked pasta, and even crackers. It only lasts a couple of weeks in the fridge because my family eats it all :)
Wow! I am glad I found your video! Everything I didn’t know that I needed to know in the order I needed to ask! And…recipes for roasted tomatoes for the families meal. I love the taste of roasted tomatoes in oil, I only knew to eat t hem on crackers with wine. I have again put in way too many tomato plants and I don’t have a lot of freezer room so I bought canning jars to be ready yet it never occurred to me I need3d to change the canning recipe. This is a great video, every part of it visual (I’m very visual) and valuable I am subscribing and I thank you from my heart.

Thank you for this very informative video. Would you ever spend the extra time by scraping out seeds and liquid? Do you find if you use an immersion blender that the seeds impart a bitterness?
Yes the seeds can lead to some bitterness when chopped with a blender. If you want to remove them press the cooked mixture through a sieve and press the pulp through with a spoon, the seeds and skins come out. Or use a food mill if you have one.

After a very successful year in my 'paste' tomato garden, I've canned 20 quarts and twice as many pints. I've even canned a dozen pints of sauce, and I'm looking for something new to add to my bounty. I like the idea of roasting so I can add a little extra concentrated flavor here and there to my recipes. _For this application, would you advise the lower temperature? And how would you store them?_ (I do have a vac pack machine and a deep freezer)
Fantastic job with the tomatoes! You'll be loving them this winter. I would roast them at 350 and freeze them using your vac pack. If you like more charring, increase the temp.
I am getting ready to roast tomatoes tonight... what about freezing with olive oil in a jar instead of canning? How long would they last in a refrigerator with evoo? Thank you.
I had no idea that you can freeze roasted tomatoes up to a year. I definitely will try this. Great video!

I roast green tomatoes all the time for salsa and it's absolutely the flavor I am looking for.
Super! Definitely a great strategy - just get a different flavour with green and red tomatoes - whether mixed or just one colour.

Stick to metal for better roasting/caramelizing. Glass will keep things more moist.

One question: With so many blending options why do you choose a food mill? This is a tool I’m considering as I’ve seen Italian grandmas use it before.
I use the food milk for apple sauce and tomatoes. I like how it separates peels from the rest of the pulp.

Hi Tammy. You can certainly freeze the with it without olive oil. I don’t know about keeping them in the fridge in oil, it’s not something I do.
