My house was smelling like Italy that's for sure. Next time I may add some onions and a bud of garlic and roast together then turn it into a sauce and can.
In Quebec here and weather has not been good for tomatoes this year although I did can 34 pints, 6 juice and some dried peels in a small jar. Yummy. Interested in the roasting of the tomatoes.
I just found your channel (via this video) and I'm so glad I did! You are a gift! This is my first year canning (what feels like a bazillion pounds of) tomatoes and I'm super intimidated. I was so excited when I planned and planted, but now... I sure wish I'd paid more attention to my momma in the kitchen! God bless her, she sure tried... Moving on... I noticed you were reusing store-bought sauce jars. I've wondered about doing the same on several occasions. Would be allowed/willing/able to say how many times have you successfully reused them for canning? Have you pressure canned with them or just water-bathed? Are there any particular types of jars that you do or don't recommend reusing? Thanks so much for any and all of your information!!! :)
@lilylady2350 first of all thank you so much for the kind words. It did my heart good. Second, I use any jars I can get in order to save money. I save pasta sauce, salsa, Alfredo sauce, chip dip, pickle, and pepper jars. Basically any jar that has the pop seal lids. I only feel safe right now to use those for water bathing. I save my other jars for pressure Canning. I reuse them up to two or three times. Then I toss them because they could get weaker. You will still have some that want seal so I have some that don't, I will just put those in the refrigerator and use first. 😉 Thanks so much for watching
Dear hubby was the one baby sitting these while I took a much needed shower after swimming. 😊 He roasted them until they turned really soft and wrinkled. You can get a good char on them if you like until the skins start turning black. Not burnt. Just adds extra flavor. I kept the juices as well. More flavor there too. We have opened jars and just ate them as a side dish as well with a meal. 😊

There are some things that didn't do well for us this year either. I usually have boat loads of Zucchini but this year nothing.

How long did you cook tomatoes for and do you add the juice or do you just dump it out
