My questions are: Should I record a video of me breaking down my spec work copies and add it to my spec work portfolio? And if so, do I need to explain the customer journey, awareness and sophistication level of the copy, how big of an idea it is and how it COULD sell? Do I need to explain my research process for the copies I'm writing for? Can I just have 3 spec work pieces in my spec work portfolio? Appreciate all your work, Sean!
Of course you _can_. There are no rules here. You may omit or include anything you like, from spec pieces to an essay you wrote in the 3rd grade. The question you have to answer honestly is: Do you think that will help you stand out? Do you think that will adequately display your personality, knowledge, competence, and skillset to someone who wants to hire you based on your personality, knowledge, competence, and skillset? If you answer yes, I hope you are correct and wish you the absolute best of luck as you apply! If you answer no... well, then I'll just say that you shouldn't expect extraordinary results from ordinary inputs.
